Bush's Best All-American Chili Recipe & Chili Round-Up

I've made several different Chili recipes over the years and think I'll continue on with trying the name brand ones when I find them... This Bush's Best All-American Chili is an easy recipe with minimal ingredients, and we start with a can of flavored beans. I found that the tomato paste makes this a nice thick stew with a robustly tomato flavor. It also calls for more green pepper than any other chili recipe I've seen. Of all the chili's I've had, I'd say this the least sweet, so if your crew is cutting back on sugar you might want to try it. Overall this is a nicely flavored, middle of the road chili that should appeal to most, and one that I might serve with hot sauce for heat lovers, and BBQ sauce for sweet lovers, on the side.
One last thing, I think there's enough sauce to stretch this a little further and add an extra can of rinsed beans of your choice. And I forgot the cheese again😕

Fresh Green Beans with Parmesan & Lemon Zest -Instant Pot or Steamed

The string beans are winding down in the garden, but I did get a couple meals from them over Labor Day Weekend:@) If you'd like to elevate a side dish and make it just a little more special, these Fresh Green Beans with Parmesan and Lemon Zest are very good. Cook the beans your favorite way, I like them in the Instant Pot, toss with a little butter, top them with parm, some freshly zested lemon peel, and salt and pepper. Super easy, very pretty, and mighty tasty! Don't hesitate to give this a try folks, I think you'll be pleased. 
Instant Pot fresh string beans: Beans in steamer basket, 1 C water, set to 2 minutes, automatic release.

Fresh Green Beans with Parmesan & Lemon Zest
Cooked hot beans.
Toss with a little butter-optional.
Sprinkle liberally with parmesan cheese.
Zest some lemon peel over top.
Salt and freshly ground black pepper to taste.

Heinz 57 Kabobs, Darn Good Baked Beans, Meatball Appy & Labor Day Weekend...

I'm guessing there will be a few BBQ's this weekend and folks might be looking for a little inspiration... May I suggest these Heinz 57 Chicken Shish-Ka-Bobs:@) Easy and very tasty, and if you're not inclined to skewer the kabobs, simply grill up some chicken breast and slather it with the sauce. Good stuff folks:@)

And one of my favorite side dishes are these Darn Good Baked Beans with Bacon and Brown Sugar. This is a very nice recipe that starts with three types of canned beans, and will appeal to most folks in the crowd.

Bringing the appetizer? These Three Ingredient Hawaiian Meatballs couldn't be easier. Heat in slow cooker, microwave, or in a disposable pan on the grill.

Whatever you are doing this Labor Day Weekend, whether firing up the grill (free apron pattern here), or going out to eat...

Chicken Fajita Stew

This Chicken Fajita Stew was a nice change of pace for dinner. I kinda winged it, the idea was to use a lot of peppers and onion, as with traditional fajitas:@) While I didn't have a recipe, the boys liked this meal and I wanted to write down what I did so we can have it again at some point in time. Make it yours, you know what your crew likes... Want more chicken or peppers? Add more. Do you know of another vegetable that works well with Tex/Mex flavors? If yes, add it and by all means please share... While the fajita seasoning has familiar flavors, it is a little different than taco seasonings. And while I did serve this over rice, we were happy to give up the heavier tortilla calories. Don't hesitate to give it a try folks, it's a lighter whole foods stew that would be good any time of year.
I used the whole seasoning recipe for this meal.

Chicken Fajita Stew
Drizzle olive oil
up to 1 or more lbs Boneless chicken breast, thinly sliced
Large onion, sliced
2-3 large bell peppers, sliced
Couple jalapeños, cleaned well, sliced
14.5 oz can diced tomatoes with juice
up to 14,5 oz can black beans, drained and rinsed
1 C frozen corn
Chicken bouillon cube or equivalent
1/2 C water
Fajita seasoning
Additional salt to taste
Hot rice for serving
Sour cream for serving-optional

Fajita Seasoning-adapted from here
2 tsp chili powder
1 tsp paprika
1 tsp salt
1 tsp sugar
1 tsp oregano
1/2 tsp cumin
hearty 1/2 tsp garlic powder
hearty 1/2 tsp onion powder
Light shake of cayenne
1 Tblsp corn starch-for stew, can leave out if traditional fajitas
Mix well
  1. Heat olive oil in dutch oven. Sprinkle chicken with S&P.  Cook chicken and remove to plate. 
  2. Add more oil as needed, sauté onion and pepper for about 5 minutes.
  3. Add tomatoes, corn and black beans, heat through.
  4. Add fajita seasoning and chicken (with juices) back to pot, stir and cook until it thickens. Adjust salt to taste.
  5. Serve over hot rice, and with sour cream and maybe some pickled jalapenos if desired.

Summer Garden Side Dish & Raised Bed Garden Update

This Summer Garden Side Dish/Salad is another super simple way to use up some of the veggies the garden gifts us. Just mix and match whatever is in season, whether plentiful, or you just have a few... I had some green beans, a cucumber, a few cherry tomatoes, chives, and fresh parsley. Dice and mix with your desired amount of Italian salad dressing. I have to say, this was amazing with a grilled chicken breast for dinner:@) 

Pics from July 1st: Two pots of green beans in the background, one heavily producing and coming to the end, and I just planted seeds in the second pot. The little Dollar Tree bird bath has been very popular this year:@) Mostly wasps and brown finches so far, but I'm glad I picked it up. 

By the time July gets here the garden has gotten pretty large and overgrown... The tomatoes have reached the top of the stakes and now I'm beginning to pinch them back and cut branches to allow sunlight and airflow. Cucumbers are doing ok and I have made a batch of my favorite Refrigerator Bread and Butter Pickles. If you only try one pickle recipe from Pig In Mud folks, this is the one I recommend:@) You can use the brine for Jalapeno Pickles too...

Planter has a small yellow squash plant I rescued from the garden center, I'm hoping it catches up soon. Pepper plants didn't get very tall (yet), but they are happy...

Summer Garden Side Salad
  1. Whatever garden vegetables and herbs you have on-hand, diced bite size. If using string beans, toss into boiling water for about 2 minutes. Immediately run under cold water to stop the cooking process, dry and add to the rest of the veggies.
  2. Mix with liberal amount of your favorite Italian Salad Dressing.
  3. A few grinds of fresh black pepper would be nice...
  4. Chill and serve.

Simple Sloppy Chili -Three Ingredients with Options...

Once again I'm using Dollar Tree for inspiration, and it led to this Sloppy Chili... They had cans of Sloppy Joe Sauce, as well as pinto beans. So I cooked up some ground beef, drained the beans, tossed in the sauce and wa-la, lunch was served:@) I purposely kept this super simple, but there are tons of options... G-Mom-B would never serve Sloppy Joes without adding onion and green pepper while the beef cooked. One can of sauce is more than enough for one pound of beef and one 15 oz can of beans. Or if you want to cut back on the meat, maybe 1/2 lb beef and 28 oz beans. Feeding a crowd (or hungry teenage boys...) stretch it to 1 lb meat and 28 oz beans. Have an extra hotdog or two from the grill out? Yep, slice and toss it in too. How about all vegetarian, use all beans. And as soon as the gardens start producing... Maybe add in some diced zucchini as well. Lots-of-options...
Cooking for One Tip: Since I live alone I like to keep Walmart's Sam's Club Black Angus Burgers in the freezer. I use them as ground beef for anything, it's easy to cook and crumble a burger, but we can't turn a frozen pound of ground beef into burgers:@)

Simple Sloppy Chili
Up to 1 lb ground beef
Up to 28 oz canned pinto beans, drained & rinsed
14.5-15 oz can Sloppy Joe Sauce
~Cook beef, drain fat, add beans and sauce, heat through.

Vegetarian Chili Mac

No secret to anyone here, I love to eat:@) But if there's one thing I know, it's that a meatless dinner at least once a week is a good idea. This Vegetarian Chili Mac is filling, tasty, and can be made in about 30 minutes. And as the weather is hopefully getting warmer, regular chili might be a little heavy, this is a lighter version. I feel it's also a great recipe to help teach kids how to cook. This is ~incredibly versatile~, add more veggies, swap out the canned tomatoes for Rotel if you'd like. Use the beans you have on-hand (I had black beans for this batch). But no matter how you make it, I do highly encourage you to serve it with sour cream-good stuff folks.
Don't hesitate to start with this recipe,
I think it will appeal to most.
Then make it your own:@)

Vegetarian Chili Mac-from Taste of Home
1 large onion, chopped
1 medium green pepper, chopped
1 Tblsp olive oil
1 clove garlic, minced
2 C water
1 1/2 C uncooked elbow macaroni
14.5 oz can chili beans, undrained
14.5 great northern beans, drained and rinsed
14.5 oz can diced tomatoes, undrained
8 oz tomato sauce
4 tsp chili powder
1 tsp ground cumin
1/2 tsp salt
Sour cream for serving
  1. In dutch oven cook onion and peppers in olive oil until onion is translucent.
  2. Add garlic, cook for a minute, stirring constantly.
  3. Add everything else except for some cream. Bring to boil, stir, reduce to simmer. Cover and cook for about 15-20 minutes stirring occasionally, or until macaroni is cooked.
  4. Serve with sour cream.

Kansas City Style Pulled Pork BBQ Chili

As soon as I saw this recipe in Food Network Magazine I immediately knew I'd be making it on Super Bowl Sunday:@) What makes Kansas City Style Pulled Pork BBQ Chili a little different? A. Pork in chili, and B. It's non-apologetically sweet. The boys ate it with sour cream, I added some pickled jalapenos and really enjoyed the fresh scallions. This is very nice if you're looking for something that cooks for a few hours making the house smell great, and is a good variation of chili. 
Full disclosure: I used pork stew meat, and cut back on the meat and added an extra can of beans. The only other thing I might do differently, hold the BBQ sauce until the meat has cooked and been shredded. I'd just heat that through with the beans.

Kansas City Style Pulled Pork Chili-from Food Network Magazine
3 lbs boneless pork shoulder, cut into 4 chunks
S&P
Vegetable oil for frying
2 medium onions, chopped
3 cloves garlic, minced
1 large serrano chili, minced
3 Tblsp tomato paste
3 Tblsp chili powder
2 Tblsp brown sugar
1 Tblsp cumin
2 tsp oregano
12 oz bottle lager
28 oz crushed tomatoes
1 C sweet BBQ sauce
2 (15 oz) cans kidney beans
Sour cream, scallions, cheddar cheese, avocado, pickled jalapenos, tortilla strips and/or cornbread for serving.
  1. S&P meat, add oil to dutch oven, brown meat. Remove to plate.
  2. Cook onions for about 5 minutes, add pepper and garlic. Stir constantly and cook for 1 minute.
  3. Add tomato paste and chili powder, cook and stir for a minute.
  4. Add brown sugar, cumin, oregano, beer, tomatoes and BBQ sauce. Also 1-2 C water, start with one, can add more if you want more broth.
  5. Bring to boil, reduce heat, add lid to dutch oven. Cook on very low bubble for 2-3 hours.
  6. Shred meat, add meat and beans to pot, heat through.
  7. Serve as desired.

Quick Ham and Canned Great Northern Bean Soup

This Quick Ham and Canned Great Northern Bean Soup is a nice hearty way to use up some leftover ham from the freezer. And perfect for the cold snowy weather a lot of us are dealing with right now... My thoughts: If you have bacon fat, sub that for the butter:@) I like the chili powder and think it's supposed to help with the smoky flavor, but think I'd cut back the next time. This will be a thinner broth based soup. I also might add a little fresh spinach once my Aerogarden starts producing, and my seeds have sprouted:@) Don't hesitate to give this a try folks, I think you'll be pleased with this nice easy soup.
Recipe easily cut in half.

Quick Ham and Bean Soup-adapted from Taste of Home
2 large carrots, cleaned and chopped
2 large stalks celery, chopped
1/2 C chopped onion
2 Tblsp butter
1 small clove garlic, about 1/2 tsp minced
Four 15 oz cans Great Northern Beans, drained and rinsed
4 C chicken broth
2 C ham, cubed
1 tsp chili powder-I'll start with 1/2 tsp next time
1/4 tsp pepper
1 small bay leaf
  1. Saute carrot, celery and onion in butter for about 5 minutes. 
  2. Add garlic and stir until veggies are soft, about 2-3 more minutes. 
  3. Add everything else, bring to boil and heat through.
  4. Remove bay leaf before serving.

Snow! Soup Recipes-Fast or Long Simmer & Barbie Crochet Hooded Scarf Free Pattern

We’re anticipating our first snow of the year on Sunday, maybe not much here north of Philly, but talking about it sure puts a buzz in the air... I thought I'd share a couple of my all time favorite soup recipes, one that's a quicker meal and one in case you saved the ham bone from Christmas and want to smell something hearty simmering on the stove for a couple hours. Sound good? Great:@) And you can always find more ideas on my Soup and Stew Pinterest Board here.

Jack-O-Lantern Refried Bean Dip & Red October Pumpkin

What I love about this super cute Jack-O-Lantern Refried Bean Dip is, you can make it as large, or small, as you'd like:@) As a point of reference, mine is on a standard 10" dinner plate. This would be cute for a Halloween party, or as a snack for spooky movie night... It's served at room temperature, so no worries about having to heat it up. But, if there happens to be leftovers, mix it all together, heat in microwave and roll it in a flour tortilla. Good stuff folks. 

What I did:
  1. Spread refried beans (either canned or homemade) into a thick pumpkin shape on serving dish. Don't forget to make a stem... I used homemade but would guess this is about 28 oz.
  2. I made ridges in the beans with the back of a spoon so I could spoon salsa into them. Carefully add salsa.
  3. I started with finely grated yellow cheddar cheese and gave it a rough chop. Carefully place on raised part of pumpkin.
  4. Chop black olives and add as eyes, nose and mouth.
  5. If you need to neaten things up a bit, use the tip of a knife to help nudge cheese and olives around.
  6. Add chopped chives, or anything green to stem.
  7. Serve with tortilla chips.

Wendy's Chili Copycat

I'll be honest folks, I've never been to Wendy's, even though they are plentiful here north of Philly. ~But~ I am aware that their chili is quite popular. We just had a chilly rainy weekend, so I decided to test out a Copycat Wendy's Chili recipe. It's very good! This is a nice middle of the road, flavorful chili, that will probably be liked by most (which is probably why a restaurant makes it:@) Perfect for crowds, and leftovers are great... Serve with hot sauce on the side for heat lovers. 

I made a half batch,
so only used one can of kidney beans.
The recipe calls for pintos too.
Serve with a ladle to get lot's of broth.
I just spooned mine out for the pic.

Copycat Wendy's Chili-from Taste of Home
1 medium green pepper, chopped
2 medium onions, chopped
1/2 C celery, chopped
1 Tblsp oil-I didn't use this
2 lb ground beef, low fat
2 (28 oz) cans diced tomatoes, with juice-petite diced ideally
8 oz can tomato sauce
1 C water
2 Tblsp Worcestershire sauce
1-2 Tblsp chili powder-I used full amount
1 tsp garlic powder
1 tsp oregano
1 tsp salt
1/2 tsp ground pepper
16 oz can kidney beans, drained and rinsed
16 oz can pinto beans, drained and rinsed
  1. Sauté peppers, onion, celery and ground beef.
  2. Add everything else, bring to boil, reduce to light simmer. Cook for 1 1/2 hours.

Slow Cooker Fresh Green Beans with Brown Sugar & Butter

Ok, I'm not suggesting we eat this Green Bean with Brown Sugar & Butter side dish often... But I am suggesting we treat ourselves every once in a while:@) Especially if we have fresh string beans growing in our own garden! And here in Philadelphia, we still have time to gamble on one last planting, where beans will be ready to pick towards the end of October. This recipe works best with really plump, pudgy, almost over-ripe beans... We've all seen them. These are sweet, buttery, soft, and yummy. A great side dish with a more savory protein. 
Normally my family enjoys our beans with a little bite, this is a nice change of pace:@)

Fresh Green Beans with Brown Sugar & Butter
For each 1lb fresh green beans, trimmed, cut into bite size pieces, washed
3 Tblsp butter
3 Tblsp brown sugar
Pinch S&P
  1. Rinse beans under cold water, remove from colander and add to vessel of slow cooker. *For ease of clean-up, can use a slow cooker liner.
  2. Add pinch of salt and pepper.
  3. Add dots of butter to top of beans.
  4. Sprinkle top with brown sugar.
  5. Cover, I suggest adding a towel under the lid, and cook on high for about 2 hours. 
  6. Stir with each serving and serve with slotted spoon.

Bar-B-Que Pork Stew (or Burrito Filling, or Dip...)

Did you make pulled pork this holiday weekend? This BBQ Pork Stew is a great way to use up some leftover meat, and can be whipped up in no time. Use pork chops, cooked loin, or leftover shredded pork from sandwiches. In large skillet, simply cook up some onion and peppers, add corn and enough Bar-B-Que sauce to create a nice juicy meal. Want more gravy? Add a little cornstarch to the drained Rotel juice, and adjust BBQ sauce to your taste. There aren't any rules here folks, cooking doesn't need to be complicated, let's just add what we like and use those leftovers in a different way:@)

I can think of several serving options... I used a yellow rice here. I can see this served over polenta, or over hoe cakes or cornbread. How about rolled in a flour tortilla as a burrito. Or, if feeling a little naughty, maybe spooned over Fritos:@) And ~it's h-e-r-e~... Football season!!! If using shredded BBQ pork, this could even be a dip served with tortilla chips! Just small dice the peppers and onions.

Bar-B-Que Pork Stew
Up to 1 lb pork, any cut of meat or leftovers you have
Drizzle olive oil
Large onion, diced
Large green pepper, diced
2 cloves garlic, minced
10 oz Rotel, drained
14.5 oz can black beans, drained and rinsed
1 C corn, either frozen or canned drained well
1 C BBQ sauce, your favorite brand
  1. Quick saute pork if not using leftovers, remove from pan. Or dice/shred leftover meat.
  2. Drizzle pan with olive oil, add onion and pepper. Fry for about 5 minutes or until lightly softened.
  3. Add garlic, cook a minute.
  4. Add everything else and heat through.
  5. Serve over rice.

One Pint Dilly Beans -Canning Recipe

This is a year of off timing for the garden... Seems that when something is ready to be picked, we aren't having Sunday dinner. So I shared some veggies with neighbors and work, and tried to use up everything I could. I ended up with just enough string beans to fill a jar so, here we have One Pint Dilly Beans. This is a water bath canning recipe, and while it does require a little work, it's a good kind of work:@) Now my only decision is, do I want to eat them now, or save them for colder weather when the garden is done...

The jar once done canning:
Don't worry if the beans are shriveled,
they will plump back up when cool:@)
2024 Update: I split this into two jelly jars instead of one pint.
One Pint Dilly Beans
2 tsp dill seed
1 clove garlic, whole
shake of crushed red pepper flakes
Beans, washed, ends trimmed off
1 T pickling salt
1/2 C + 2 Tblsp vinegar-I used white vinegar
1/2 C + 2 Tblsp water
  1. Add dill seed and garlic to sterilized pint jar. Pack tightly with beans.
  2. Boil salt, vinegar and water, reduce to simmer, simmer 10 minutes.
  3. Pour brine over beans to within 1/2" of top of jar. De-bubble jar.
  4. Add lid and ring.
  5. Put jar into boiling pot of water, ideally water should cover jar by about 2".
  6. Boil 10 minutes, kill heat, let sit in hot water 15 minutes. Remove jar and place on kitchen towel to cool completely. Listen for the ping and love life!

Instant Pot Taco Rice with Zucchini and Black Beans -Vegan, Vegetarian

*Ding-ding-ding, let the Zucchini Games begin! We're officially into summer squash season and looking for more ways to use up what the garden gifts us. May I suggest this Taco Rice with Zucchini and Black Beans. This works well as a side dish, or a vegetarian or vegan burrito filling with the black beans adding some protein. Another thing to love, it's unattended cooking in the Instant Pot pressure cooker. Serve this with some grilled chicken-dinner done:@) I also love that while the heat from the cooked rice will heat it up a bit, the squash gives the rice a nice little bite. 
Since my plants have already been generous, I did only use the colorful meaty part of the squash and discarded the seeded center.

Garden update:
My mismarked squash from The Depot, while not the square green griller... Did end up making a very nice yellow squash! A quick Google, looks like Golden Egg variety? We likey:@)

Instant Pot Taco Rice with Zucchini and Black Beans
1 envelope taco seasoning, your favorite brand
1 C long grain rice
1 1/2 C water
medium zucchini or summer squash 1/4" dice, mix and match
half a can of black beans, drained and rinsed
  1. Add taco seasoning, rice, and water to pressure cooker. Stir well. Press rice setting.
  2. Automatic release when done, stir and add squash and black beans.
  3. Add S&P or seasoned salt to taste.

Potato Salad with Fresh Green Beans

My first planter of green beans was coming to an end and the plants were ready to be pulled for the next round. What do you do when you only have a handful of green beans left? How about whipping up a batch of Potato Salad with Fresh Green Beans. Simply cook the beans to crisp tender and cool them off. Then stir them into your favorite potato salad recipe. Nice and easy, and we're using up what the garden gifts us. I like that:@) Have leftover salad? Maybe stir in a little ham or a hard boiled egg and call it lunch... Very tasty, don't hesitate to give it a try folks.

Fresh Green Beans with Onion & Tomato Paste

I happened to have some beans from the garden in the fridge, and I'm always looking for new ways to make them, so these Green Beans with Onion and Tomato caught my eye. I'm glad they did:@) This is an easy recipe that adds just a little something different with the concentrated tomato paste. I encourage you to try the recipe as written, but do see a couple things that might make it a tad better... Next time I'll sub bacon fat for the olive oil, and I do believe a couple tsp of sugar wouldn't hurt... Yep folks, this will be on the Sunday dinner menu with my next batch of string beans!

Tip: I freeze extra tomato paste in approximate 1 Tblsp amounts. Then I can just add it to recipes as needed.

Green Beans with Onion and Tomato-from Taste of Home
Large onion, chopped
2 Tblsp olive oil-subbing bacon fat might be nice:@)
1 lb fresh green beans, trimmed, and cut if desired
3 Tblsp tomato paste
S&P to taste
2 Tblsp fresh parsley, minced-optional
  1. In large skillet, cook onion in olive oil until translucent and beginning to caramelize.
  2. Cook green beans in water, or steamer, until crisp tender. Drain and add to onion.
  3. Stir in tomato paste, add salt and pepper to taste.
  4. Garnish with parsley if desired.

Quick Barbeque Baked Beans

I have a few recipes for baked beans on the blog, but I wanted to try this one because it literally comes together in a couple minutes. I also liked that it's intended to be heated on the grill, perfect for summer or tailgating. But I did use the oven this time. Even though it only calls for a few ingredients, these Quick BBQ Beans do have a lot of flavor, and I'll offer a tip or two to help add your own touch if desired. These beans use pantry items, offer a faster option for a side dish, and were a big hit with my crew:@)
Want them sweeter? Add more brown sugar.
Want them spicier? Add some hot sauce.
Want intense flavor? Add extra BBQ sauce.
But I do suggest mixing the recipe as is and trying them first:@)

Other BBQ Beans recipes:

Quick Bar-B-Que Baked Beans-from Taste of Home
15 oz can kidney beans, drained and rinsed
15 oz can great northern beans, drained and rinsed
15 oz can baked beans
1/4 C BBQ sauce
2 Tblsp brown sugar
2 tsp prepared mustard
  1. Mix everything, add to baking dish or 8" disposable pan.
  2. Cover pan and place on grill for 15-20 minutes, or until heated through. 
  3. Alternately: Add to 350 degree oven for about 30 minutes, or until heated through. -Or- simply add everything to pot and heat on stove top.

Halloween: No-Bake Snack Mix, Graveyard Bean Dip & Crinkle Cookies

I thought we'd share a few ideas for Halloween snacks from the archives... If you're looking for an easy party snack this No-Bake Fall Snack Mix is a great idea:@) Everything is pre-made and purchased at the store, you simply mix and serve! And the best part, it can be tailored to whatever your crew likes. 

And I love this simple Graveyard Bean Dip.
It's basically a seven layer dip,
we just spooky it up a little with the presentation.
