- Make Jiffy Mix per package instructions.
- Gently stir in the zucchini.
- Add some oil to a heated skillet, add spoonful's of the pancake mixture to the pan, cook until bubbles show on top of the pancakes. Flip to the other side to finish cooking.
- Serve as desired.

Mini Corn Dog Bites -Jiffy Corn Muffin Mix
- Make corn muffin mix per box instructions.
- Spray mini muffin pan well. Spoon mix half way up muffins cups.
- Add hot dog piece to center of each one, push down into mix.
- Bake at 400 degrees 10-12 minutes, or until muffins are set.
- Remove from oven, pop corn dogs out, add stick if desired, and serve.

Small Any Fruit Pie Filling Dump Cake Recipe -Jiffy Cake Mix
- Pour pie filling into pie dish.
- Evenly sprinkle cake mix over filling.
- Add pats of butter all over top.
- Bake at 350 degrees for about 35-45 minutes or until top is golden brown and bubbling at edges.
- Serve with ice cream if desired.

Jiffy Mix Chunky Monkey Corn Muffins -One Banana Recipe
- Mix Jiffy, banana, milk, and vanilla until combined.
- Line muffin tin with papers.
- Fill papers about 1/3 with batter. Add peanut butter cup to center and gently push down until the top is just about flush with the batter.
- Bake at 350 degrees for about 30 minutes, or until muffins are set.
- Remove to rack and cool a bit before eating.
- Makes about 8 muffins.

Tamale Pie -Retro Jiffy Cornbread Recipe
- Cook ground beef with onion and peppers until no longer pink.
- Add corn, Rotel, taco seasoning, tomato sauce and sugar. Add salt and pepper to taste. Cook for a couple minutes.
- Pour into 9x13 baking dish.
- Sprinkle top with cheese.
- In separate bowl combine Jiffy Mix, egg and milk. Pour over cheese.
- Bake at 400 degrees for 20 minutes or until cornbread is done.

- Mix egg and milk well, stir in Jiffy Mix.

- Spread pie filling into 8x8 ungreased pan.
- Cut butter into cake mix until crumbly, adding nuts if using.
- Sprinkle mixture over pie filling.

Jiffy Jello Cake -Any Flavor Jello
- Beat cake mix, Jello, egg and water.
- Pour into greased and floured pan. Bake at 350 degrees for 22 minutes, or until toothpick comes out clean.
- Remove from pan, cool cake on rack.
- Mix reserved Jello, powdered sugar and milk. Add a little more milk for thinner, a little more sugar for thicker glaze.
- Pour over cake, let glaze set, and serve!

Slow Cooker Corn Pudding -Jiffy Mix
This Slow Cooker Corn Pudding is an easy side dish that would be perfect with BBQ pork, and if you want to plan ahead a bit, it would make a great holiday side dish too! I love that in the summer you don't need to heat up the oven, and at the holidays it frees up the oven:@) And this is actually a perfect Crock Pot recipe, it cooks up nicely and remains moist. The recipe calls for a 3-4 quart slow cooker, I wanted to use my 2.5 qt casserole CP, well... It did puff up and touch the top of the towel I placed under the lid to catch condensation. So, you may want to use a larger slow cooker.
- Use a liner for super easy clean-up. The liners may actually be the real reason I've been enamored with slow cookers lately...
- I read a fantastic tip on Recipes That Crock... All slow cookers have hot spots, so turn your vessel every so often. If you have a round vessel, give it quarter turns, I simply took my oval out, turned it around and put it back in the opposite way.
- My best suggestion: It's always a good idea to make a test batch to see exactly how long it will take to cook, especially if this will be a special holiday side dish:@)

Slow Cooker Corn Pudding-adapted from Betty Crocker
14.5 oz can sweet creamed corn
14.5 oz can corn, drained
Box of Jiffy Mix
1 C sour cream
1/4 C butter, melted-I used 2 Tblsp butter, 2 Tblsp water
1 egg
1 C shredded cheese, either cheddar or pepper jack-I used pepper jack
- Mix everything, add to vessel (I used a liner, spray well first if not using a liner).
- Turn to high, cover. After one hour, remove lid, wipe off condensation, place paper towels or dish towel under lid. I also rotated the vessel. I did this after every hour.
- Cook for 2-4 hours on high... My 2.5 casserole Crock Pot took 3 hours and 15 minutes.

Bacon and Cheddar Cornbread Stuffed Jalapenos And a New Aldi Seasoned Salt
It is literally hot sauce in a powdered form and I've been sprinkling it on everything.
Jalapenos that have been cut in half lengthwise and cleaned.
Jiffy Cornbread Mix, plus ingredients on box
Cooked and crumbled bacon, as much as you'd like-I added about a hearty 3 Tblsp
Handful of shredded cheddar cheese-I probably added a hearty 1/4 C
- Mix everything, spoon into jalapenos.
- Bake at 375 degrees for 12-18 minutes or until cornbread is set.
- Sprinkle with seasoned salt and serve with cold beverage of choice.

Zucchini Cornbread with Cheddar Cheese Using Jiffy Mix-from Bring It Food Hub
2 boxes Jiffy Corn Muffin Mix
1/3 C milk-I used Half and Half
1 egg
2 C shredded zucchini-peeled if desired
3/4 C shredded cheddar cheese
2 tsp butter-optional for greasing pan
- Stir cornbread mix, milk and egg.
- Mix in zucchini and half of the cheddar.
- Pour into sprayed muffin tin (or lined with cupcake papers), or sprayed 8X8 pan, or heated 10" cast iron with melted butter swirled around to grease pan.
- Sprinkle top with remaining cheese.
- Bake at 400 degrees approximately 15-17 minutes for muffins, 20-22 minutes for cornbread.

Fried Battered Zucchini Using Bisquick Type Baking Mix

- Add baking mix, egg, milk and seasoning to bowl. Mix well.
- Dip zucchini in batter, allow excess to drip off, and fry at approximately 375 degrees until nicely browned. Turning occasionally as needed.
- Remove from fryer to paper towel lined plate and sprinkle with salt.
- Serve immediately and enjoy.

Pina Colada Cornbread -Using Jiffy Mix
Pina Colada Cornbread
1 Jiffy Cornbread Mix
1 tsp sugar
1 egg
1 tsp dark rum
up to 1/3 C coconut milk
2 rounded Tblsp packed crushed pineapple, drained really well and pressed between paper towels to dry
- Add mix, sugar and egg to bowl.
- Add rum to 1/3 measuring cup, fill the cup with coconut milk and add to bowl.
- Mix well.
- Stir in pineapple.
- Pour into well greased pan and bake per box instructions: approximately 15 minutes for muffins, 20 minutes for cake pans, or until golden brown and toothpick comes out clean.

Cornbread Christmas Tree with Bell Pepper Decorations
My pan was sprayed with Bakers Joy, make sure you give it a good coating.
1 C cornmeal
1 C A/P flour
1 C milk
1/4 C sugar
1/4 C butter
2 eggs
1 Tblsp baking powder
1/4 tsp salt
Optional: diced peppers, enough to cover pan
- Spray baking pan well (or grease and flour pan) and sprinkle peppers into pan.
- Mix first 8 ingredients well, gently pour into prepared pan (or baking dish).
- Bake at 400 degrees for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool for a couple minutes once out of the oven, then turn out onto baking rack to cool completely.
