Easy Pumpkin Maple Meatballs -2 Ingredients

I don't think these Pumpkin Maple Meatballs could get any easier folks. Your favorite frozen meatballs, a jar of pumpkin maple spread from Aldi (or any store that has something similar), and a slow cooker. I used my Little Dipper Crock Pot and about half a jar of the jam. Only two ingredients Lynn? Ok, if you'd like to add a little something else... How about some pumpkin pie spice. Or dare I say... Maybe a few shakes of hot sauce? But honestly, my crew says it was perfect as is. And I mean the whole crew this time! This is a nice sweet seasonal treat perfect to snack on after leaf raking, a trip apple picking, or pumpkin hunting at the garden center.

And of course it's great for...
Football parties:@)

Let's change up our hosting routine and try something new while the pumpkin flavors are available! Maybe even tuck a jar away for Thanksgiving... Just a thought.

The Aldi jam I used:
As a point of reference I used 14 bite size meatballs and half of a 12.5 oz jar in my Little Dipper Crock Pot. There was room for a few more meatballs.

Pumpkin Maple Meatballs
  1. 1 lb+ frozen cooked meatballs
  2. 12 oz jar Pumpkin Maple Spread
  3. Place meatballs in slow cooker, cover and cook on high for an hour.
  4. Pour jam over meatballs reserving a few tablespoons to stir in before serving.
  5. Turn temp to low, place paper towel under lid, and cook for about two more hours or until heated through. (My Little Dipper is only one temp, I use at least 2 1/2 hours).
  6. Stir in reserved jam.
  7. Stir and serve with fun food picks.

Hamburger Meatballs with Ketchup Sauce -Slow Cooker Appetizer

The idea behind these Hamburger Meatballs with Ketchup Sauce is, they are for the gathering where burgers are -not- being served. This is a nice easy appy that starts with frozen meatballs and has a four ingredient sauce. The sauce is sweet and very similar to the topping some meatloaf recipes call for. And best of all, just toss it into a slow cooker (I used my Little Dipper Crock Pot) and let it heat up while you straighten up the house, or gather your team gear and get ready for the game. I say add a pizza and it's a party:@) The recipe below is specifically for the 2 Cup Little Dipper Crock Pot, you'd need to increase it as desired.

I had to chuckle, while on my bloggy break my son said the thing he missed the most were the different meatball recipes, here you go Jay:@) Football may be done for now, but March Madness is right around the corner and so is baseball season... Should be another fun year for the Phillies!

Slow Cooker Hamburger Meatballs
1/2 C ketchup
2 Tbsp brown sugar
1 Tbsp yellow mustard
1 Tblsp relish, I used sweet relish, didn't have dill on-hand
8oz-ish frozen meatballs (or enough to fill Little Dipper Crock Pot)
  1. Add sauce ingredients to vessel, stir to combine.
  2. Add meatballs, stir to coat.
  3. Put paper towel under lid, cook for 2 1/2-3 hours or until meatballs are hot.
  4. Serve with fun food picks.

Easy Perky Party Meatballs -A1 Sauce, Slow Cooker

I saved this recipe for Easy Perky Party Meatballs for a couple reasons... I happened to have some A1 Sauce in the fridge, and I'm always looking for new game day munchies:@) I also liked that it called for a slow cooker, I scaled it down and used my Little Dipper Crock Pot. These meatballs are surprisingly tasty! The sauce is tangy and thick (I added the 'Perky' to the title), and as long as you have some A1, it comes together quickly with pantry ingredients. Don't hesitate to give them a try folks, I think you'll be pleased. Heck, it's hot outside, I called this lunch the day I made them...

Easy Perky Party Meatballs-from here
32 oz frozen pre-cooked meatballs
14 oz bottle ketchup
1/4 C A1 Sauce
1 Tblsp minced garlic
1 tsp Dijon mustard
  1. Add meatballs to vessel of  3 quart slow cooker.
  2. Mix everything else for sauce, pour over meatballs.
  3. Place paper towel under lid and cook on low for 3-4 hours, or until meatballs are hot. I cooked mine for 2 1/2 hours in the Little Dipper.
  4. Serve with fun food picks.

Meatballs with Thai Sweet Chili Sauce-Two Ingredient

If your crowd likes a little sweet heat, you will love this Meatballs with Thai Sweet Red Chili Sauce Appetizer. I made mine in my Little Dipper Crock Pot, but this is truly a heat and eat snack... Stove top, oven, microwave, all will work. And it's absolutely perfect for these last few games of football with a nice cold beverage... Hearty snacks don't need to be involved or fancy folks, sometimes the best tasting things are the simplest:@)
Serve with fun food picks,
or small appy forks.

My chili sauce came from Dollar Tree:
Your favorite brand will work great...

Meatballs with Sweet Red Chili Sauce
  1. Generously cover cooked frozen meatballs with sweet red chili sauce.
  2. Heat in slow cooker with paper towel under lid, oven, microwave or on the stove top, until meatballs are heated through.
Enjoy a snack and
Have a Happy Day:@)

Hawaiian Pizza Dip -Oven or Little Dipper Crock Pot

Can you feel the excitement of playoff football in the near future??? Big games call for great snacks and this Hawaiian Pizza Dip is a winner! Mix, do a little layering and bake (or add to your Little Dipper Crock Pot) and you'll have a hearty munchie that's ~almost~ as substantial as lunch... It's also a nice way to use up some leftover ham. I whipped this up as an appy for Sunday dinner and it was a big hit, my favorite dipper was the bagel chips, you can even find them at Dollar Tree. Don't hesitate to give this a try folks, it's good stuff:@)
Recipe is easily cut in half or even less,
just guesstimate, it doesn't need to be exact.

Hawaiian Pizza Dip-from Three Boys and a Dog
8 oz cream cheese, softened
2 C shredded mozzarella cheese-divided
1/4 C parmesan
14 oz jar pizza sauce
1/4 C diced onion-I forgot this
1 tsp garlic powder
8 oz ham, chopped
8 oz crushed pineapple, drained well
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes-optional
Dippers: Crackers, Frito Scoops, French bread, Melba toast, bagel chips, etc.
  1. Mix cream cheese, 1C mozzarella, parmesan, pizza sauce, onion, and garlic powder.
  2. Pour into sprayed baking dish. I used a shallow 23 oz Corelle dish for half of the recipe. I'm guessing a 1 quart to 1 1/2 quart would be fine for the whole recipe. Or even a pie dish.
  3. Sprinkle on top, ham, pineapple, the other 1C of mozzarella, top with the Italian Seasoning and pepper flakes if using. I just added a few shakes of the pepper flakes.
  4. Bake at 375 degrees for 30 minutes or until top is lightly browned.
  5. Alternately: Mix everything, add to Little Dipper Crock Pot, place paper towels under lid, plug in for about 2 1/2-3 hours.
Enjoy a snack and have a happy day:@)

Cocktail Franks with Cherry Pie Filling Appetizer -Slow Cooker, Stove Top, Microwave, or Oven

As we're truly into the Christmas countdown and entertaining season is in full swing, it's always good to have one super easy appetizer that whips up in seconds, and can be scaled down, or makes enough to feed a crowd. These Cocktail Franks with Cherry Pie Filling check all the boxes folks:@) Basically they only need to be heated up and served with cute food picks. Fastest way, microwave until heated through. Alternately, heat on stove or in oven. And the ultimate, guests are coming later, dump into Crock Pot, turn to low for 3 hours, and finish straightening up the house...

My best serving suggestion: Add a spoon to the vessel and have folks eat from little cocktail plates.
I've seen several variations of this, some call for 3 Tblsp of brown sugar and pineapple chunks. I think this basic idea has been around forever, don't stress the measurements, grab a can of pie filling at Dollar Tree and use up to 1 lb of franks. Get a second can if serving more. If your store has the 21 oz size, no problem...

Cocktail Franks with Cherry Pie Filling
1 lb cocktail franks
1 lb cherry pie filling-can use either the 15 oz or 21 oz it will be ok
~Heat everything and serve.

Enjoy a snack and have a happy day:@)

Cheater Tamale Meatballs-Slow Cooker, Oven, or Microwave

Disclaimer: Absolutely nothing authentic here folks... This is just a tasty little snack. I debated about calling these Tex/Mex Meatballs, but decided to stick to my original thought, Cheater Tamale Meatballs. Super simple and only three ingredients, frozen meatballs and enchilada sauce served on the wide dipper type Fritos. Tell me that doesn't sound like football food:@) The key to the tamale part is serving with the corn chips. You can make as little or as much as you want, I used my Little Dipper Crock Pot. This could also be heated in the oven, or even in the microwave.
In a perfect world,
this would be great using mini meatballs.

Cheater Tamale Meatballs
  • Fill slow cooker vessel with cooked frozen meatballs, add canned red enchilada sauce. 10 oz can was more than enough for my Little Dipper Crock Pot.
  • Cook in Little Dipper about 2 1/2 hours, or on low for about 4 hours. I like to add paper towels under the lid to collect condensation.
  • Or bake 350 degrees for about 30-40 minutes until meatballs are heated through. Or cook in microwave until meatballs are heated through.
  • Serve with wide Frito type corn chips.
Enjoy a snack and

No Sugar Micro Batch Apple Butter -Little Dipper Crock Pot

I had four apples leftover and they were starting to look sad... So I thought I'd whip up a little No Sugar Apple Butter, and to help flavor it, I used pumpkin spice because I think it seems a little sweeter than plain cinnamon. This is truly a set it up and let it do it's thing recipe, I used my Little Dipper Crock Pot. Have more apples? Use a larger slow cooker. I also used a liner, ~love~ the easy clean-up:@) Add spices to taste once done cooking. Four small apples made about 4 oz. Good stuff folks!
Now, this is ~your~ apple butter...
Want it a little sweeter?
Either let it cook down longer,
or add sugar to taste.

No Sugar Micro Batch Apple Butter
  1. Peel, core and small dice apples.
  2. Add to slow cooker vessel, use a liner if desired.
  3. Place towel under lid and cook on high for about 2 1/2 hours..
  4. Remove lid, mash apples.
  5. If home, continue to cook on high, if leaving mostly unattended turn to low. Leave lid off and stir occasionally. Cook until liquid reduces and butter becomes brown and thick. *I used the Little Dipper and cooked mine for about 10 hours.
  6. Cool, add lid and store in the refrigerator.
Let's use it up and have a happy day:@)

Firecracker Cherry Meatball Appetizer -Slow Cooker, Oven, or Stove Top

I'm calling this appy Firecracker Cherry Meatballs because it has just a touch of heat from cinnamon and cayenne pepper, while the cherry pie filling adds a little sweet to tame that heat... This is an easy appetizer that can be tossed together in the Crock Pot, or heated any way you'd like, even just in the microwave if you use cooked frozen meatballs.

RW&B foil food picks can be found at Dollar Tree this year.
Fun for the summer holidays:@)
Grab 'em now folks, they're going fast...
Actually, you can find everything for this recipe at Dollar Tree.

Firecracker Cherry Meatball Appetizer
16-24 oz frozen meatballs
15 oz can cherry pie filling
1 tsp sugar-or more to taste
1 tsp cinnamon
1/8 tsp cayenne pepper-or more, you know your crowd
  • Slow Cooker: Add to vessel, stir to mix. Place paper towels under lid, cook on high for 2 1/2 hours or until meatballs are hot. Remove lid and stir to serve.
  • Oven: Add to bakeware, stir to mix. Bake at 350 degrees for about 45 minutes or until meatballs are hot. Stir and serve.
  • Stove Top: Add to pot, stir to mix. Heat slowly until meatballs are hot. Stir and serve.

Microwave Velveeta Cream Cheese Dip for Pretzels & Eagles Stamped Spoon

One of the things we love here in Philadelphia is soft pretzels! My boss even buys them for the office once or twice a month. If you don't have pretzel shops in your area, there are several frozen varieties at the stores, I used Super Pretzel brand nuggets today. Here's a super simple quick Velveeta Cream Cheese Dip that gets melted in the microwave, and only calls for two ingredients. My version starts with an envelope of soft Velveeta from Dollar Tree. And of course it can be enjoyed with hard pretzels, or even vegetable dippers too:@)

Oooey, gooey, melty goodness...
Serving a bigger crowd?
Increase the recipe and use your Little Dipper Crock pot.
Heating for 2-3 hours should do it:@)

I wanted to treat myself to a little something-something to commemorate the Eagles being in the Super Bowl this year. So I ordered a custom stamped spoon from ETSY Shop Prose and Polish. The players were saying "it's a Philly thing" talking about attitudes and expectations. So that's what I had stamped on my spoon, good for ~all~ sporting events, and quite honestly, any occasion. Don't hesitate to reach out to Kimberly for gifts folks, she's a very responsive shop owner. And sometimes a one of a kind personalized gift is the best kind! Even if we're treating ourselves:@)

Velveeta Cream Cheese Dip
4 oz envelope Velveeta cheese
1 1/2 oz cream cheese, softened
  1. Place Velveeta and cream cheese in microwave safe bowl or zip top bag. Heat for 10-15 second increments, checking often, until softened and mixable.
  2. Stir bowl or squish bag until cheese is incorporated. If using a bag, squeeze mixture into serving bowl.
  3. Reheat a bit if necessary to thin dip.
Enjoy a snack and have a happy day:@)

Holiday Meatball Appetizer -BBQ Sauce, Orange Marmalade, Cinnamon and Cloves -Little Dipper Slow Cooker

I thought it would be fun to doctor some standard BBQ sauce with traditional Christmas flavors, and boy, this Holiday Meatball Appetizer was a big hit! The spices were nice and added just a little hint of warm flavor. This appy would be great for the holidays or your next football party. Playoffs anyone??? I think it's best to use a regular bar-b-que sauce since the marmalade adds sugar... But then again, you know your crowd:@)
My ratio below is for the Little Dipper Crock Pot.
I think it would be easy enough to make a larger batch.
Plenty of on-line recipes call for a full size bag of meatballs and a whole bottle of sauce.

Holiday Meatball Appetizer
7 oz frozen, fully cooked meatballs (or just fill Little Dipper)
1/3 C BBQ sauce, your favorite brand
1/3 C orange marmalade
1 tsp corn starch
3/4 tsp cinnamon
1/4 tsp ground cloves
  1. Add meatballs to vessel of slow cooker.
  2. Mix everything else in bowl, pour over meatballs.
  3. Put paper towel under lid, plug Little Dipper in, cook for 3 hours or until meatballs are hot and cooked through.
  4. Stir well to coat meatballs, sauce will be thick.
Enjoy a snack and have a happy day:@)

Honey BBQ Kielbasa Bites-Little Dipper Crock Pot, Oven, Stove, Grill or Microwave Appetizer

When it comes to party appetizers, it doesn't get much easier than these Honey BBQ Kielbasa Bites folks. Simply, slice, mix, heat, and eat:@) The beauty of it is, you can heat them any way you'd like. Toss it into a slow cooker-great. Toss it into the microwave-faster and easier. Tailgating-heat on the grill. Or use a more traditional oven or stovetop. As for the sauce, use your favorite brand and as a general rule of thumb, the bar-b-que sauce to honey ration is about 2:1. But I suggest you taste it, and adjust the sweetness, you know your crowd...

Honey BBQ Kielbasa Bites
  • Little Dipper Crock Pot-Approx 1/2 rope smoked sausage. 1/4 C BBQ sauce, 2 Tblsp honey. Add paper towel under lid, cook for 3 hours.
  • Stove top: Brown sausage, add BBQ sauce and honey, mix well, heat through and serve.
  • Oven: Mix all, add to baking dish. Bake at 350 for 30-45 minutes or until heated through.
  • Microwave: Mix all, add to microwave safe bowl. Microwave at 1-2 minutes increments until heated through.
  • Grill: Mix all, add to disposable pan. Place pan over indirect heat, stir occasionally until heated through.

Tomato and Parmesan Meatball Appetizer -Little Dipper Slow Cooker or Larger

The idea behind these Tomato and Parmesan Meatballs was to make a tomato sauce that's extra thick and would stick to the meatballs instead of dripping off... Making it less messy for a grab and go appy. Mission accomplished:@) I used my Little Dipper Crock Pot, I think this would make enough sauce for up to 14oz of meatballs. Simply double, etc for larger slow cookers.

Just a quick review,
the little dipper is the dip size crock pot that holds about 2 C.

Tomato and Parmesan Meatball Appetizer
at least 7 oz frozen meatballs, or enough to fill Little Dipper Crock Pot
8 oz can tomato sauce
1 Tblsp tomato paste
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp Italian seasoning/herbs
2 Tblsp parmesan cheese-divided
few grinds black pepper
  1. Mix everything ~except reserve 1 Tblsp parmesan cheese~ .
  2. Pour into slow cooker vessel.
  3. Place paper towel under lid, cook on low 6 hours, or high 3-4 hours. Or just plug Little dipper in for about 3 hours.
  4. When meatballs are hot and before serving, stir in last Tblsp of parmesan cheese.
  5. Serve with fun food picks.
Enjoy and snack and have a happy day:@)

Slow Cooker Baby Potatoes with Onions -Litter Dipper Crock Pot or Larger

This Slow Cooker Baby Potatoes with Onions is another recipe I just had to try. It's one you might want to test ahead of time and add to your list of holiday ideas to save stove or oven space. And of course it's helpful during hot weather too. To take it one step further, I made a small, approximate quarter batch, in my Little Dipper Crock Pot:@) My potatoes were from the Little Potato Company (found at Walmart) and literally were only about 1" in size. Those itty whole ones you see, yea, don't do that. Cut them all in half. They call little potatoes like this creamers, and yep, I think that's accurate!
What makes these different than my Slow Cooker Waxy Rosemary Potatoes?
Butter and chicken broth.
Good stuff folks:@)

Slow Cooker Baby Potatoes with Onions-from Salty Side Dish
1 1/2 lbs baby potatoes, cut in half
2 large onions, sliced, preferably a sweet onion
1/4 C butter, melted
1/2 C chicken broth
3 Tblsp brown sugar
1/2 tsp salt
1/4 tsp pepper-or S&P to taste
  1. Combine potatoes and onions in Crock Pot.
  2. Mix everything else, pour over potatoes, mix well.
  3. Cover, heat on low 6-7 hours, or high 3-3 1/2 hours. I placed a paper towel under the lid.
  4. Serve with slotted spoon.
Eat well and have a happy day:@)

Honey Buffalo Meatballs -Little Dipper Crock Pot or Larger Slow Cooker

Do you know what time it is folks? Yep, it's ~~time for some football~~:@) I've been looking for fun new snacks and munchies to try, and these Honey Buffalo Meatballs were fantastic! And couldn't be easier if you choose to use frozen meatballs. But don't hesitate to whip up your favorite recipe and simply add them to the sauce. I used my Little Dipper Crock Pot, recipe is easily increased for a larger crowd. Honestly, I think the sauce ratio below would be good for up to 1lb of meatballs. But believe me, you'll want lots of sauce for dipping!

I forgot to add my Eagles green food pick...
But you get the idea:@)

Sweet, spicy hot, and very sticky!
Unlike the weather, which has just been, um...
Hot and sticky...

Honey Buffalo Meatballs
frozen meatballs-I used 7 oz
1/4 C Frank's Hot Sauce, or your favorite
2 tsp cornstarch
1/4 C honey
1/4 C brown sugar
  1. Add meatballs to slow cooker.
  2. Mix hot sauce and cornstarch until smooth.
  3. Stir in honey and brown sugar. Pour over meatballs.
  4. Place towel or paper towels under lid, cover and cook in Little Dipper for approximately 2.5-3 hours, or until hot. If using larger slow cooker, at least 2.5 hours on high, approximately 4 hours on low.
  5. Give the sauce a stir to thicken up a bit, stir meatballs to cover in sauce again.
  6. Serve with fun food picks.
Enjoy a munchie and have a happy day:@)

Sweet Pineapple Meatballs -Little Dipper Crock Pot (or Stove Top) Appetizer

I wanted to try an appy that was a little different than sweet and sour, but still used pineapple... These Sweet Pineapple Meatballs were a big hit at Sunday dinner! Four ingredients, which includes the frozen meatballs, and about five minutes time... That's pretty easy folks:@) Since I wanted each bite to have both meat and pineapple, I cut the meatballs in half. My Little Dipper Crock Pot only holds up to 2 cups, so the leftover pineapple was stored in the fridge to have as a snack at another time. I made them in the Little Dipper Crock Pot, but it would be even quicker and easier on the stove.

Sweet Pineapple Meatballs
7 oz frozen meatballs
20 oz pineapple chunks, reserve 3/4 C juice
3 Tblsp brown sugar
1 Tblsp corn starch
  1. Pack slow cooker with meatballs and pineapple.
  2. Heat pineapple juice, brown sugar and cornstarch in small pan. Bring to boil, cook until it thickens.
  3. Pour into Crock Pot.
  4. Place paper towel under lid, cook 2.5-3 hours.
  5. Stir and serve.
  6. Alternately: Stove Top= Brown meatballs, thicken sauce, stir together, serve!
🍍Enjoy a snack and have a happy day:@)

Kielbasa BBQ Ranch Appetizer -Little Dipper Crock Pot or Larger Slow Cooker

I had some kielbasa in the freezer and thought it might be fun to whip up these Kielbasa BBQ Ranch Appys for the Eagles game on Sunday. The sausage was great, the game... Not so much, ugh. The ranch dressing tames the BBQ sauce and really adds another layer of flavor. Kielbasa isn't something most folks think of as a party appetizer, so it's a little different. An extra bonus, it only calls for three ingredients. I wouldn't hesitate to make these again folks:@)
I chose to brown my sausage a bit with the George Foreman.
Small batch = for each 1/2 C BBQ sauce, add 1 1/2 tsp dry ranch mix (or a smidge more).

Kielbasa BBQ Ranch Appetizer -from The Frugal Girls
12-16 oz smoked kielbasa
16-18 oz BBQ sauce
One envelope dry ranch mix-approx 3 Tblsp
  1. Cut sausage into bite size pieces, add to slow cooker.
  2. Mix BBQ sauce and ranch, pour over sausage.
  3. Put paper towels under lid.
  4. Cover, cook on high for 1.5 hours or low for 2.5 hours or until heated through.
  5. Serve with fun food picks.
Good luck if your team is still in the playoffs!

Top Three Posts of 2021

It's always fun, and a bit surprising, to look back over the year's posts to see which were the most popular... I love that this year's group has quite literally, a little bit of everything! I say that because I'll add Butterball Cookies as an honorable mention, #3 was pretty close. My focus or direction for 2022? I'll simply say I'm going to try to eat a tad healthier and do some more walking. My biggest foodie goal? I'd like to learn how to make homemade frozen chicken nuggets. Bite size, whole breast meat, lightly breaded and ready to go from freezer to air fryer whenever buffalo chicken sounds good (which is often:@)

As for my top three...
My co-worker says she thinks of Pig In Mud as an appy blog.
Looks like other folks do too:@)

It always tickles me when a canning recipe makes the list!

Yes folks, we do ♥ our Instant Pots:@)

Scrolling through, I was thinking back and have to say,
my personal favorite from this year?
Without a doubt, these Sugar Cookies with Jello Frosting are well worth making again!

As 2021 comes to an end I'd like to say thank you!
Thank you for taking the time to stop by my little corner of the blogging world.
Your visits are what keeps me looking for new recipes and ideas to try, and to share.
I wish you a very ~healthy~ and Happy New Year:@)

Peanut Butter Dip -Oven or Little Dipper Crock Pot

This Peanut Butter Dip is a nice treat that can be served with anything from apples and celery, to pretzels and graham crackers for dipping. Actually, bagel chips might be really good too... The recipe was written up for the Little Dipper Crock Pot, but since not everyone has one, I made this batch in the oven and it turned out just fine. The main difference, the slow cooker will keep it warm longer, but then, it might not last long enough to worry about that anyway:@) This is a little thicker than the average dip, yet more dippable than peanut butter. I might stir in one last splash of cream next time.
I used my 5" LeCreuset square baking dish.

Peanut Butter Dip-from A Year of Slow Cooking
3/4 C smooth peanut butter
1/4 C brown sugar-I added 2 Tblsp
1/4 C cream or half and half
1 tsp vanilla
4 regular size marshmallows
Anything you'd like to dip that goes with peanut butter.
Oven:
  • Place in baking dish big enough to hold everything, yet shallow enough for dipping. Cover with foil, bake at 350 degrees for 20 minutes. Remove foil stir, return to oven until marshmallows have melted enough to incorporate, maybe 10-15 minutes more. Stir well and serve.
Little Dipper Crock Pot:
  • Add everything, cover, heat for one hour, or until everything melts and can be stirred together.
Have a sticky sweet happy day:@)

Spicy Sweet Potato Dip -Little Dipper Crock Pot or Larger Slow Cooker (or Oven)

This four ingredient Spicy Sweet Potato Dip was a nice change of pace. It came together in no time, and only needed to be heated up in the slow cooker. Spicy because I used regular Rotel, you can opt for the milder variety, and of course add some cayenne pepper, or use a hot taco seasoning for fire lovers. Simply mash, mix and heat, and your crowd will be happy in no time. If you need a last minute party treat that's different (and plays nicely with the holidays), it's hard to go wrong with this dip folks.

And of course it's perfect for, say it with me now,
football parties:@)
Not the prettiest pics, but it is pretty darn tasty:@)
This was a great way to use up a can of sweet potatoes I forgot I bought.

Spicy Sweet Potato Dip
15 oz can Bruce's Sweet Potatoes, drained
10 oz can Rotel or store brand, drained
1 Tblsp cream cheese, in chunks
1 Tblsp + 1 tsp taco seasoning, or to taste
  1. Can be mixed right in the vessel:
  2. Mash sweet potatoes (I used a fork), stir in drained Rotel, cream cheese, and taco seasoning.
  3. Heat on low for 2-3 hours. Alternately, heat on stove or in microwave and transfer to slow cooker to keep warm. Can heat in the oven too, I'm guessing 25-30 minutes at 350 degrees.
  4. Stir to combine and serve with tortilla chips.
Snack well and have a happy day:@)
