New Items -Dollar Tree Alert!

Popping in to share a few things that caught my eye over the weekend at Dollar Tree... Parchment Paper Liners for Air Fryers. A great idea to help with clean-up if you cook fish or chicken breasts in your air fryer. As with everything, some packs had 20, some 15... Shrinkflation...

Dollar Tree canning lids, I can only say, I've used them and so far, no complaints. I've tried both hot water bath canning, and by turning the jars upside down for 15 minutes, the jars sealed fine. Just sharing my personal experience with the little bit of canning I do these days...

Do you, or does someone in your group, grill with charcoal? DT has some Kingsford Herb Flavor Booster Briquettes. They would be fun to play with on a lazy Saturday or Sunday... And maybe a little something extra to add to the Father's Day gift.

And finally, it's not often we talk house cleaning here a PIM, but I'm smitten with these little Chiffon Dusters. They easily scoot around bookcases and into corners, and would probably work well for car dashboards too. They are written up to be washable, as of this writing I haven't tried that yet.

Parmesan & Cracked Black Pepper Zucchini Rounds -Air Fryer Recipe, Appetizer or Side Dish

I picked my first zucchini from the garden *yay!* and decided to turn it into a fun snack or appetizer. And these Parmesan & Cracked Black Pepper Zucchini Rounds could also be used as a nice side dish for dinner. Super simple, very tasty, and totally dippable:@) I enjoyed mine as is, but they could be served with ranch or blue cheese dressing, marinara sauce, or a cool dill dip. The key is to use the air fryer so that the cheese browns up quickly, but also to slice the zucchini a hearty 1/2" thick so it still has some bite when cooked. Another nice thing is this calls for readily available grated parm cheese, yep, the kind in the green can most of us already have in the fridge. Easy-peasy.

Parmesan & Cracked Black Pepper Zucchini Rounds
  1. Preheat air fryer at 450 degrees while preparing squash.
  2. Wash, dry and slice zucchini 1/2" thick. Squash should be at room temperature.
  3. Place zucchini cut side up and spray with cooking spray, I used olive oil spray.
  4. Sprinkle with salt, add some freshly cracked black pepper, completely cover top of zucchini with grated parmesan cheese.
  5. Place zucchini slices in air fryer basket, cheese side up, give them some room so air can circulate around them. 
  6. Carefully place basket in air fryer, turn heat down to 400 degrees, cook for 3-6 minutes, until cheese is nicely browned.
  7. Remove from basket and sprinkle with additional S&P to taste.
  8. Serve with dip if desired.

How to Make Air Fryer Jalapeno Poppers & what makes it a jalapeno popper?

I've made a ton of stuffed jalapenos here on the blog, love them! My no-heat jalapeno plant is still ~very~ happy and truly overachieving... So I decided to treat myself to some Air Fryer Poppers for lunch one day. This started me thinking, with so many recipes and variations out there, what's the difference between a stuffed 'peno and a popper? To me, it comes down to one thing, cream cheese. We can make a stuffed pepper with anything we'd like, but add a little cream cheese to a jalapeno, and it's a party:@) Here's what I do to make poppers that are a tad healthier and a tad lighter in calories, yet still taste great! No breading, no deep frying, and this will work with an air fryer, or in the oven if you don't have one (although the oven might take a little longer to bake.)
I used my Instant Pot with the Mealthy Air Fryer Lid.

Air Fryer Jalapeno Poppers
  • Preheat air fryer at 400 degrees while preparing peppers.
  • Slice peppers in half lengthwise. Remove seeds and membrane if desired. A melon baller works great!
  • Place on air fryer rack cut side up. Bake at 400 degrees for 3-4 minutes. 3 if you like them a little firmer, 4 softer.
  • Remove from air fryer, place cut side down on paper towel to drain, and allow to cool until you can handle them.
  • At this point I added some tin foil to my baking rack, I didn't want cheese to melt all over...
  • Mix softened cream cheese with other shredded cheeses if desired, I like cheddar. Spread the cheese inside the pepper.
  • Add protein of choice if desired, I added some small diced leftover buffalo chicken. (You could mix the meat in with the cheese too, either or.)
  • Top with more shredded cheese.
  • Sprinkle with panko or regular bread crumbs if desired. I did not use them this time.
  • Bake at 400 degrees for about 3 more minutes or until cheese is melted.
  • Serve with bleu cheese or ranch dressing, hot sauce, celery sticks, etc.

Air Fryer Oven Fries -15 Minutes, No Guilt

The boys gave me the Mealthy Air Fryer lid for my Instant Pot last year and I have to say, it does get used! One of my favorite things are these No-Guilt Air Fryer Oven Fries. Thinly cut potatoes mixed with a light drizzle of olive oil cooked to a nice golden crispness in less than 15 minutes-gotta love that:@) A bonus, the lid doesn't heat up the kitchen much in the summer either, way better than using the oven during hot weather. The only down side, you are limited to the size of the basket... But I'm usually only cooking for myself, so one medium potato fits fine, this works well for me!

No-Guilt Air Fryer Oven Fries
One medium potato.
Cut into sticks, I aim for one side to be about 1/4" thick.
Dry potato sticks on paper towel or dish towel. If you have the time/patience to rinse then dry the potatoes, even better.
Drizzle lightly with olive oil and mix to coat.
Add to air fryer basket in a single layer, preferably with space between potatoes.
Cook at 400 degrees 8 minutes.
Flip potatoes and cook for another 4 minutes or until deep golden brown and cooked through.
