Spiced Olives in Tomato Juice -Appetizer or Charcuterie Board

I've made a few different marinated olive recipes on the blog, but I have to say this is the most robustly flavored one to date... These Spiced Olives in Tomato Juice pack a big garlic punch and the crushed pepper flakes help back that up:@) The olives will drink up the flavors more as the days go by, and some comments really say to give it the full 10 days. I've even seen this recipe referred to as The Christmas Olives. So if it's holiday fare, you know it will be great as we're entertaining and throwing a couple steaks on the grill this summer. I'm even thinking about using it to top some pasta with chicken... My only suggestion, give it a good 30 minutes at room temperature before serving so the olive oil has a chance to loosen back up. Don't hesitate to give this a try folks, if you love garlic, you'll like these olives!

Perfect for charcuterie boards, cocktail parties, and along side a hearty sandwich on game day. My best suggestion: I would eat these within the 10 days, I wouldn't store them longer. And with the Christmas reference above... This will ~loosely~ be my Christmas in July post for this year. But don't wait until the holidays to make them:@)

And a tip: If you don't have tomato juice on-hand, substitute half tomato sauce, half water.

Spiced Olives in Tomato Juice-from Taste of Home
7 oz jar green olives with pimento
1/2 C tomato juice
1 Tblsp olive oil
1/2 - 1 tsp crushed red pepper flakes
2 cloves garlic, minced
1/2 tsp dried basil
1/2 tsp dried oregano
  1. Drain olives, discarding liquid.
  2. Mix everything else in small bowl, pour into jar of olives.
  3. Cover and refrigerate 3-10 days, turning jar daily.
  4. Drain before serving.

Holiday Stock Up-Charcuterie Tray Dollar Tree/Walmart Alert!

I wanted to share a few items that might help make holiday entertaining (or football parties) a little easier, or add more variety to our trays. All of these Charcuterie Board additions can be found at Dollar Tree or Walmart...

Look at that gorgeous color! And I'm using my Dollar Tree Eagles plate too:@) The silver appy forks and spoons are in the wedding section. 3oz bags of Mini Thin Pretzels in assorted flavors are the perfect bite size. Charcuterie trays can be large and elaborate for a crowd, or nibbles for two. As a point of reference, the bottom of my plate is only about 4.5x8". 

These olive tapenades are DT also and I ~love~ the square jars! They are small enough to add directly to the serving board or platter. The jars are so cute, I actually took the time to remove the label and wash the jar before I opened it. They had both green olives with red peppers, and a green and black olive combination. Place a small appetizer spoon or fork in the jar for serving so folks can add a dollop to their cheese and crackers.

How about some sliced dates as a slightly sweet addition to cheese and meats. Or do you have a holiday fruitcake or fruitcake cookies (really good) in your future? Yep, Dollar Tree has 3oz packages of whole dates-perfect. And they do still have the dried Ocean Spray Cranberries too.

Walmart had a whole end display of these candies and confections. There are several coconut variations and peanut varieties. The vibrant red, white and green combination stopped me in my tracks... Each one is about the size of a super chunky candy bar. This is a rich candy, I like each color cut into four pieces adding 12 colorful holiday cubes to your party tray:@)

Pepperoni & Cheese with Olives & Italian Dressing-Appetizer

As time goes on, more and more I find myself appreciating ~easy~ ideas, whether for a football game, a family gathering, or the holidays. I love things that come together quickly, while still providing a big burst of flavor. And this Pepperoni and Cheese with Olives and Italian Salad Dressing does just that. It's also easy to make a party size batch, or a snack for one or two people. Simply cut what you need and toss with salad dressing... Done:@) A final touch could be garnishing with chives or parsley, totally optional, I happen to still have chives in the garden. 

Now, I will say,
this is not a low sodium snack...
Just a yummy one:@)

Pepperoni and Cheese with Olives and Italian Dressing
As much as you'd like:
Pepperoni, bite size cubed
Cheese of choice, bite size cubed-I used cheddar
Olives of choice
Pepperoncini if desired, press the brine out first
Italian Dressing, your favorite-I used inexpensive Kraft
  1. Add first four items to bowl, add enough dressing to coat well, stir.
  2. Garnish with fresh herb of choice if desired.
  3. Serve with fun food picks.

Lemon and Herb Marinated Olives

While these Lemon and Herb Marinated Olives are certainly fancy enough for any holiday meal, they'd be great on a game day charcuterie board, or sandwich platter too! With simple flavors, salty olives, fresh thyme leaves and lemon, this is an appetizer that comes together quickly, and brings a big pop of flavor to the party. I also like that it's marinated and served at room temperature. Extra bonus: Even though we just had that incredible cold snap, the thyme in my garden still offered a few green leaves for this appy:@)

Lemon and Herb Marinated Olives-from Martha Stewart
2 C large unpitted green olives, drained-I used pitted with pimento
1/3 C extra virgin olive oil
2 Tblsp chopped fresh parsley
1 Tblsp lemon zest
1 Tblsp lemon juice
2 tsp fennel seeds-I didn't have this
2 tsp fresh thyme leaves
few grinds of black pepper
  • Toss everything together, let marinate at room temperature for an hour. Store any leftovers in a covered jar in refrigerator.

Charcuterie Christmas Wreath Appetizer

These Charcuterie Wreaths have been around for years, but I wanted to suggest that they don't have to be super sized for a big party... I made a small one for our Sunday dinner and it turned out cute! A bonus, the rosemary is from my garden:@) Now I will say, this is -a lot- of rosemary... I do suggest only using a few sprigs for looks, it was very fragrant! Another possible option? I read that typical Christmas trees (pine, spruce, etc) can be used as garnish too, always Google to be sure. Just a thought...

Use any antipasto appy type item that sounds good, 
and is small enough to fit on a toothpick or food skewer:
I used packaged sliced ham.
You could ask the deli to cut an extra thick slice and make cubes,
or use pepperoni or sausage.
Also, you could add a little sweet option...
Some skewers could have pineapple or maraschino cherries.

I opted for a spicy whole grain mustard in the middle...
Honey mustard, olives or pickles may be other options.

And they don't need to be staged,
simply laid on a platter works too:@)

Crowd Size Impossible Taco Pie -Bisquick

Well here's something new, I'm generally scaling recipes down, but this time I wanted to try a 9x13 size Bisquick Impossible Taco Pie. I had some hamburger and needed an idea for Sunday dinner, this turned out to be a real crowd pleaser:@) We all loved adding the fun toppings at the table, use anything your crew likes with tacos. This hearty recipe also calls for four eggs, the boys thought this dish would be great to serve for brunch too.

Leftovers freeze beautifully, simply reheat in microwave.

9x13 Pan Bisquick Impossible Taco Pie-adapted from Betty Crocker
1 lb lean hamburger
1 1/2 C onion, chopped
2 envelopes taco seasoning-very robust flavor, can start with 1 1/2 envelopes, add more to taste
14.5 oz can black beans, rinsed and drained well-can sub 1 C beans, 1 C corn
10 oz tomatoes with chiles (Rotel or store brand) drained well-can use green chiles
1 C Bisquick
2 C milk
4 eggs
2 C cheddar cheese, shredded
Any toppings you like with tacos
  1. Spray glass 9x13 pan with cooking spray (I cooked the hamburger and baked it in a 12" round, straight sided, non-stick pan-worked great!).
  2. Cook hamburger and onion. 
  3. Turn of heat, stir in seasoning, beans, corn if using, and Rotel. Pour into 9x13 pan.
  4. In bowl, whisk Bisquick, milk and eggs. Pour over hamburger mixture.
  5. Bake at 400 degrees for 30 minutes or until knife comes out clean.
  6. Top with cheese, bake 10 minutes more, or until cheese browns up nicely.
  7. Let sit about 5 minutes before slicing into  squares.
  8. Serve with anything you like on tacos: Cheese, sour cream, lettuce, salsa, black olives, avocado, corn chips, tortilla chips, etc.

Grab and Go Charcuterie Skewers Appetizer -Thanksgiving Turkey or Pumpkin Centerpiece

I thought I'd create a more mobile party snack for Thanksgiving... We have two options for presentation folks, this silly turkey for the kiddie table, or you could simply fill the pumpkin with skewers for a more adult looking centerpiece (mulled wine tasting party anyone?). This Turkey or Pumpkin Charcuterie Skewers Appetizer is a fun seasonal way to serve party nibbles. It's very impressive and honestly, not difficult at all, it only takes a little time to assemble. 
Tips:
  1. The best tool for poking holes into the pumpkin is the pointy thing that comes with the pumpkin carving kits.
  2. It's best to have cheese as the last item added to the skewer. That way the food doesn't fall off when pulled out of the pumpkin.
  3. Add anything that sounds good, black olives, vegetables, different lunchmeats, make some skewers all fruit, some all cheese, etc. 
  4. I used three cheeses, sharp cheddar, pepper jack has great green and red flecks, and I love the marbled colors from colby jack for this fall appy.
  5. Try to get a squatty pumpkin for best stability. After the gathering you can make some roasted pumpkin seeds too.
  6. Long stems are great for the turkey neck, short would be best for the loaded skewer theme.
  7. My turkey's hat is a k-cup. A black felt brim would be a cute addition too.
  8. Eyes were hot glued to underside of k-cup. Same with felt beak and goggle thingy.
  9. Last tip, be sure to place pumpkin on a plate to protect table and/or tablecloth.

Marinated Almond Stuffed Olives -Appetizer or Snack

We've been on a bit of an olive binge here at Pig In Mud. I blame Aldi, it started with their jalapeno stuffed olives (which I sincerely hope they never stop carrying!!!). Now I'm searching out new flavors and appetizer recipes... I have to say these Marinated Almond Stuffed Olives were a very pleasant surprise! Herby, puckery, a meaty bite, and robustly flavored, we all thought they were great:@) The recipe calls for red wine, I didn't have any and used grape juice. So that's a nice substitution if you need it or don't want to add the alcohol. Whether it's for holiday parties, foodie gifts or a football munchie... Don't hesitate to give this one a try folks!

I also switched to red wine vinegar and scaled the recipe down to 1/3, 
which is one can of black olives and one small jar of pimento stuffed olives.
You may be tempted to use olive oil, it does get thick and clumpy in the refrigerator... Not pretty.


Marinated Almond Stuffed Olives-adapted from Taste of Home
Whole almonds, cut in half-I used the small pack you get near the baking items at Dollar Tree
1 can black olives pitted, 6 oz, drained
1 small jar green pimento stuffed olives, 7 oz, use the juice too
3 Tblsp red wine vinegar-original recipe uses balsamic vinegar
3 Tblsp red wine or grape juice, either purple or white
3 Tblsp canola oil
1 small clove garlic, slivered or minced-or more... You know your crowd:@)
1/4 tsp sugar
1/4 tsp dried dill weed
1/4 tsp dried basil
1/4 tsp dried parsley
1/3 tsp dried oregano
1/3 tsp ground black pepper
  1. Add everything to a jar or bowl that seals well (I used Lock-N-Lock). Gently flip upside down a few times.
  2. Store in refrigerator for at least 8 hours to marinate. Flipping a few times to stir ingredients.
  3. Serve with fun food picks.

Dollar Tree Alert! Fun Olives for Halloween Appetizer Trays

I just had to grab a jar of these really neat looking olives this morning, they would be a perfect addition to Halloween appetizer trays! I love it when something different jumps out at me, and when it's $1... I'm in. They come skewered so you could add them to a martini, I even think the skewers add to the Halloween vibe:@)
 
 Now, I don't know if you're supposed to eat the peppers or not...
I popped the whole thing in my mouth and, um, those peppers are mean little buggers!!!
I did enjoy the pepper flavor with the olive though, so I removed the pepper and ate the olives:@)
I can see this being a true conversation starter at a party.

Kinda eerie looking, I really think they are great for Halloween!

Zesty Italian Cucumber Salad

I saved this recipe for Zesty Italian Cucumber Salad the minute I saw it! I love every single ingredient and using your favorite Italian salad dressing (Good Seasons for us:@) makes it nice and easy. The only thing that could make this any better... A garden tomato, but we have a way to go before that happens here in Philly. It would be pretty with some of the green left on the cucumber too. Don't hesitate to give this a try folks, it's light and perky, and speaks to warmer weather!
Want something a little more substantial? 
Toss in some cooked macaroni and call it pasta salad (I called it lunch:@)

Zesty Italian Cucumber Salad-from Red & Honey
3 cucumbers spiralized into noodles-I just cut mine into half moons
1 tomato, chopped
1/4 C onion, diced
1/4 C green olives, sliced in half or large chopped
1/4 C pepperoni, sliced or diced-I made match sticks
1/8 C Parmesan cheese-I used the can
1 Tblsp oregano-I cut back a little
1/8 tsp black pepper, or to taste
Italian Salad Dressing, enough to coat everything well
~Mix everything and let mingle in the refrigerator for an hour.

Elf Deviled Eggs

Not that I want to give him any more reason to cause some more mischief but... My inspiration for these Elf Deviled Eggs was the Elf on the Shelf:@) I thought they turned out kinda cute! Once peeled and cut in half, I picked out the eggs that had the longest area of white up top and simply sliced the smallest piece off both sides to create the illusion of his hat. Fill with your favorite egg mixture, add eyes and mouth, wa~la. You have a little something silly that the kids are sure to get a kick out of! As to how to work it into your family's Elfy shenanigans... Well, I'll leave that up to you:@)

Two more ideas for embellishing Christmas deviled eggs Tree and Holly:

Elf Deviled Eggs
  1. Hard boil eggs, peel, cut in half and pop out yolks.
  2. Slice tiny piece off of each side of white so it looks a little pointy for his hat.
  3. Dip tip of hat in food coloring for red and green. 5 drops, 1/2 tsp white vinegar. 1-2 tsp hot water.
  4. Fill with your favorite deviled egg mixture but smooth it out almost to cover the whole sides of the white, so he has a big round face. 
  5. Make eyes and mouth out of black or green olives. 
  6. Add something, I used Wilton star cookie decorations, maybe a small circle of olives or pickles, to create the tip of his hat.

Olive and Rosemary Focaccia made with Bisquick

If you happen to have some Bisquick on hand and are looking for a quick bread for dinner, this Olive and Rosemary Focaccia whipped up in no time. I had rosemary from my planter and the winey-briney kalamata olives added a nice little bite of tangy flavor. Will this replace your favorite yeast based focaccia recipe? Probably not, but I do think it's worth a try if you're pressed for time or curious to try something new.

Olive and Rosemary Focaccia-from Betty Crocker
2 C Bisquick
2 tsp garlic powder
1/2 C hot water
1/2 C pitted Kalamata olives-I cut mine in half
2 tsp chopped fresh rosemary, or 1/2 tsp dried rosemary crushed
1 tsp olive oil-could use more
  1. Mix Bisquick, garlic and water until stiff dough forms, let sit for 5 minutes.
  2. Sprinkle Bisquick on work surface, lightly roll dough in it. Shape into ball and knead 50 times.
  3. On ungreased cookie sheet, roll or press dough into 8" round. Sprinkle on olives, gently press into dough. Sprinkle with rosemary. I suggest dimpling the dough a bit with your fingers too.
  4. Bake 12-14 minutes at 400 degrees or until lightly golden brown. 
  5. Brush oil over top, let sit 10 minutes, cut into 16 wedges with serrated knife.

Garden Tomato and Green Olive Salsa or Salad

If you're looking for something a little different before we see the last of the fresh home grown tomatoes this year... This Garden Tomato and Green Olive Salsa or Salad was really good folks! I actually made it twice in one week. And while it's meant to be served as a dip with pita bread (we used tortilla chips), I could easily see a dinner of angel hair pasta, some sliced grilled chicken breast and a few very generous scoops of this salad on top. Did I say generous scoops? Because I meant to if I didn't:@)
And while I'm sure it's great in this salad... I didn't have any hot pepper relish.
Subbed regular old hotdog sweet relish and it was fine.
This is another easy, forgiving recipe. Other than fresh tomatoes, simply substitute what you have on hand.

Garden Tomato and Green Olive Salsa or Salad-adapted from Eating Well
1 1/4 lbs diced fresh garden tomatoes
1/4 C sliced green olives-I ~may have~ used more:@)
1 bunch scallions, sliced-I diced up some onion
1/4 C hot pepper relish-I only had sweet relish
1 Tblsp red wine vinegar
2 tsp minced fresh oregano-I subbed a little less than 1/2 tsp dried
1/4 tsp salt
1/4 tsp ground pepper-I just added a few hearty grinds
  • Mix everything gently. This is a quick dish, no need to let marinate. 
  • Serve with toasted pita chips, tortilla chips, or toasted crusty bread as bruschetta. Also good over chicken and I hear fish... It's great on a spoon too!

Adobo Chicken Kabobs with Colossal Spanish Olives

Grilled olives? Yep, and on hot summer days the huge meaty ones are salty, a little tangy, refreshing and very filling:@) These Adobo Chicken Shish-Ka-Bobs with Colossal Spanish Olives are another quick grilling idea for when you don't have time to let the meat marinate. They'd also cook up quickly on a George Foreman grill, saving the time waiting for a charcoal or gas grill to heat up. Add any veggies you'd like, but the standard three ~onion, peppers and zucchini~ work well with the adobo spices.

 And while we're talking about saving time... 
They don't have to be threaded on skewers for shish-ka-bobs either,
you could heat up a large grill basket and just toss everything into that. 

The Adobo Seasoning I used, I was tickled to find it at Dollar Tree:

Adobo Chicken Kabobs with Colossal Spanish Olives
  1. Cut chicken and vegetables into 1" chunks.
  2. Add everything except olives to bowl, drizzle with olive oil and sprinkle liberally with Adobo Seasoning.
  3. Alternately skewer chicken, veggies and olives. Add an extra sprinkle of Adobo seasoning to the meat.
  4. Grill with lid closed, over medium/high heat approximately 8 minutes or until chicken is cooked through, turning skewers a couple times. 
  5. Serve with additional Adobo seasoning in lieu of salt and pepper.
Fire up the grill of your choice and have a happy day:@)

Deviled Eggs for Shark Week and other shark sightings and ideas

I thought these Shark Fin Deviled Eggs would be a fun little snack for shark week (July 22nd this year) or a shark themed birthday party. Super simple using black olives, a little blue food dye and the ripple cutter helped make the whites look a little wavy. Kids, big and small, are sure to get a chuckle from them... I know we all did:@)

 Directions:
1. Mix your favorite deviled egg recipe.
2. Dye the whites blue (1/2 C water, 1/2 tsp vinegar, 6 drops blue dye), turn upside down on paper towels, then blot dry.
3. Fill whites with yolk mixture and top with jumbo black olive cut in half and trimmed to look like a fin. Aim for one side straight, one curved.

Marinated Mozzarella Cheese and Olives-last minute appetizer

Just find out guests are stopping by? Or need one more appy for the party? Mozzarella Cheese and Olives marinated in Italian dressing and orange zest would be a nice easy treat! It offers tons of options too, mix and match anything you like, assorted green and black olives, sun dried tomatoes, fresh crunchy celery, want to add some pepperoncini? Go ahead, you know your crowd:@) This appy gets livened up with fresh orange zest, chopped parsley and crushed red pepper flakes. Just be sure to use your favorite Italian dressing and enjoy!

I really do love all of the pretty colors:@)

Marinated Mozzarella Cheese and Olives
Mozzarella-either a big ball cut into cubes or fancy Bocconcini
Italian Dressing-I like Good Seasons
Drizzle of flavorful olive oil, approx 1 tsp for each cup of veggies
Olives of your choice
Anything else that sounds good
zest of an orange, approx 1/4 tsp for each cup of veggies
Sprinkling of fresh chopped parsley, enough to add pretty color when mixed
a few shakes of crushed red pepper
  • No real recipe here folks, add cheese and olives, etc. to a big bowl. Pour enough dressing over everything to coat it, add a small splash of olive oil. Sprinkle with zest, parsley and crushed pepper flakes. Mix well, cover and let marinate in the fridge one hour. Serve with fun picks and enjoy.

Bacon Horseradish Deviled Eggs (Bunny Optional:@)

It's that time of the year when most of us will have a few dozen dyed Easter eggs soon and I'm here to help with ideas folks... These Bacon Horseradish Deviled Eggs were very good! Be sure to use a fresh new jar of horseradish for best flavor. All of the ingredients played well together and the relish added a nice little sweet bite. My whole crew liked them and asked that they be added to our Sunday dinner rotation. 

And if you happen to end up with a couple bacon crumbles that kinda resemble bunny ears... 
Well, it is Easter... :@)

You don't have to embellish all of the eggs, just one or two bunnies are sure to bring some smiles.
Thin slices of olives for eyes, pimento from an olive for nose and chives for whiskers.

Bacon Horseradish Deviled Eggs-From Valerie's Kitchen
12 hard boiled eggs, peeled
1/3 C mayonnaise
1 Tblsp horseradish
1 Tblsp sweet pickle relish
2 tsp prepared yellow mustard
S&P to taste
6 slices bacon, cooked and crumbled, divided
paprika, smoked or regular, for top-I used smoked paprika
  1. Cut eggs in half, pop yolks into bowl.
  2. Mash yolks with mayo, horseradish, relish, mustard and S&P until creamy.
  3. Stir in 3/4 of the bacon, reserve some for garnish.
  4. Fill eggs, top with paprika and reserved bacon.

Batty for Halloween Deviled Eggs

This year I made some Batty for Halloween Deviled Eggs. They are fun with the yellow yolk mixture smoothed out a bit to look like the moon and the bats are made from large black olives. These eggs come together quickly and would be a fun addition to your Halloween party appy tray:@)

Simply cut the olive in half long-ways and trim into a pointy wing (the center part below right).
Note to self : A sharp knife would be helpful.
You need two wings per bat and you'll need to trim the solid round end off of a seperate olive for each body.
Use your favorite deviled egg recipe.

You don't need a whole tray of embellished eggs, just a few mixed in would be fun!
