Fresh Strawberry Frosting

How can something so simple be so good? This Fresh Strawberry Frosting is a great way to dress up a little 8x8 cake. The only thing that could possibly make it any better would be local berries in season.
 I love the pretty natural pink color and that's from only 3 Tblsp of fresh strawberry puree!

Fresh Strawberry Frosting-from Gastronomyblog.com
1/2 C ripe strawberries pureed, or enough for 3 Tblsp puree-I used a food chopper
1/2 C butter, slightly softened
pinch of salt
1 1/4 C powdered sugar, sifted
1/4 tsp vanilla
  1. Beat butter and salt until light and fluffy.
  2. Mix in powdered sugar until well combined.
  3. Add vanilla and 3 Tblsp strawberry puree. Important: Mix until just blended, do not over mix. It should be thick and creamy like ice cream. If you over mix it can separate... I'm speaking from experience here folks:@)

  12. It's so simple and looks soooo pretty with the flecks of strawberry. I'll be making this, too. I like Debbie's suggestion of using it on chocolate...hmmm, maybe cupcakes.
    p.s. the pickled beets and eggs tasted just like my MIL's. She was born in PA, but moved to Ohio when my hubby was little. I think I may have told you before that I was born in Greensburg, PA.

  16. I think I have had this frosting and it is good. nothing like a good strawberry cake. Have you seen the strawberry cake in Southern Living this month? I do not make cakes like that any more but it is something that this frosting is perfect for.

  26. I may not wait for strawberry season to make this. I have a box of white chocolate cake mix (what else?) on my counter, and I didn't know what to do with it. It's amazing that just a small amount of strawberry puree can create the perfect shade. This is a winner of a recipe!
