Garden Tomato and Green Olive Salsa or Salad

If you're looking for something a little different before we see the last of the fresh home grown tomatoes this year... This Garden Tomato and Green Olive Salsa or Salad was really good folks! I actually made it twice in one week. And while it's meant to be served as a dip with pita bread (we used tortilla chips), I could easily see a dinner of angel hair pasta, some sliced grilled chicken breast and a few very generous scoops of this salad on top. Did I say generous scoops? Because I meant to if I didn't:@)
And while I'm sure it's great in this salad... I didn't have any hot pepper relish.
Subbed regular old hotdog sweet relish and it was fine.
This is another easy, forgiving recipe. Other than fresh tomatoes, simply substitute what you have on hand.

Garden Tomato and Green Olive Salsa or Salad-adapted from Eating Well
1 1/4 lbs diced fresh garden tomatoes
1/4 C sliced green olives-I ~may have~ used more:@)
1 bunch scallions, sliced-I diced up some onion
1/4 C hot pepper relish-I only had sweet relish
1 Tblsp red wine vinegar
2 tsp minced fresh oregano-I subbed a little less than 1/2 tsp dried
1/4 tsp salt
1/4 tsp ground pepper-I just added a few hearty grinds
  • Mix everything gently. This is a quick dish, no need to let marinate. 
  • Serve with toasted pita chips, tortilla chips, or toasted crusty bread as bruschetta. Also good over chicken and I hear fish... It's great on a spoon too!

  4. Bill loves green olives and this salad is something he wouldn't complain about :) Double win when we both approve!
    P.S. Kitchen appliances are being installed next Wednesday. Lots to still do, but the end is in sight!
