I needed a quick dessert for Sunday dinner, and I'm kind of wishing for an early spring... So I whipped up this Jiffy Jello Cake with strawberry Jello. Nothing fancy, just a very flavorful cake with a colorful glaze on top. Use any flavor you'd like and simply reserve some of the Jello for the glaze. I like the smaller cake, and think sugar free Jello dissolves and gets incorporated easier for this type of recipe. My crew thought this was a nice little treat:@)
As a point of reference, I baked mine in a 9x5 loaf pan.
1 box Jiffy Yellow Cake Mix
4 serving Sugar Free Jello flavor of your choice, reserve 1 1/4 tsp
1 egg
1/2 C water
1/2 C powdered sugar
1 Tblsp milk or half and half or cream
- Beat cake mix, Jello, egg and water.
- Pour into greased and floured pan. Bake at 350 degrees for 22 minutes, or until toothpick comes out clean.
- Remove from pan, cool cake on rack.
- Mix reserved Jello, powdered sugar and milk. Add a little more milk for thinner, a little more sugar for thicker glaze.
- Pour over cake, let glaze set, and serve!
