Old Fashioned Sauerkraut Salad

I wanted to use up what was left of some sauerkraut so I scaled this down and served it with our bar-b-que on Sunday. Good stuff folks:@) This Old Fashioned Sauerkraut Salad whips up in no time, and is actually better if you can let it mingle for a few hours. I'd consider this an alternative to mayonnaise based cole slaw, and had some with a hotdog. Simply drain the kraut, don't press it dry, and be sure to adjust the salt to taste. My best tip: I suggest using a mild olive oil or vegetable oil, my extra virgin olive oil was pretty assertive, but did mellow with time. Have to say, I was pleasantly surprised with this side dish folks, don't hesitate to give it a try if you're up for something different. Be sure to stay tuned, I'll have a little mini series of sauerkraut ideas coming up...
Easily cut in half, 
or estimated for lesser amounts.

Old Fashioned Sauerkraut Salad -from here
32 oz sauerkraut, drained
3 Tblsp olive oil
1 medium onion, chopped fine
1 medium carrot, peeled and grated
half apple, chopped-peel if desired
1 tsp sugar
S&P to taste
fresh parsley or dill for garnish
~Mix everything together, chill at least one hour and serve.

St. Pat's Tiered Tray & Leftover Corned Beef: Soup and Hash

To be honest folks, my St. Patrick's Day Tiered Tray doesn't change too much from year to year... Top Shelf: Little bouquet of mini daffodils from the yard, and acrylic craft bead shamrocks scattered around. My thrift store leprechaun and the Dollar Tree large mushroom fairy garden house he lives in:@) 
Bottom Tray: Flameless candle with holiday wrap, bowl of colorful candy, S&P, food picks, and napkins (my tiered tray has to be functional as well as cute:@). And I've had the large shamrock ornament forever.

Seems like all of the early holidays are ganging up on us this year! St. Pat's and Easter are only two weeks apart, so my ReView for leftovers is a little early, but the ideas are worth tucking away... What makes my Corned Beef Hash a little different? A nice generous sprinkle of fresh rosemary:@) That and a beautiful brown crust takes it right over the top. Talk about a breakfast I look forward to every year, good stuff folks.

And this Corned Beef and Cabbage Soup would be great as an alternative to a big holiday dinner, or a good use of leftovers. Maybe even tuck some meat away for a rainy day in April. It's a nice light meal.

Fried Cole Slaw with Bacon & Mason Jar Tip

Pierogies are one of the meals in my Sunday rotation and I love to serve them over a big platter of cooked cabbage. The last time I made them I decided to amp up the cabbage a bit, so we had Fried Cole Slaw with Bacon, and it was very well received. I used everything I add to coleslaw except mayonnaise and sugar. And honestly, a little pinch of sugar won't hurt anything:@) This is a nice, hearty side dish that fries up quickly, and is easily scaled up or down.

Tip: I always save bacon fat, it stores in the refrigerator forever (ok, the Food Police would prefer I say, a long time:@) Sometimes it seems we've all gotten so used to the trendy side of Mason jars that we might forget... They're great for food storage! Yep, you can even pour hot grease right into the Mason jar. Plastic lids are available at Walmart and on-line, and the best suggestion... Peanut butter jar lids fit on Mason jars too, and work perfectly for refrigerator storage. This red lid is from the Great Value brand. Gotta ♥ recycling and re-using.

Fried Cole Slaw with Bacon
4-6 slices bacon-you know your crowd
1 large carrot, julienne
Half small onion, thin slice
Small clove garlic, minced
Half of a large head of cabbage, shredded
Couple shakes of celery seed.
1 tsp apple cider vinegar
S&P to taste
  1. Fry bacon crisp, remove to paper towels, crumble when cool. 
  2. Pour off all but about 1-2 Tblsp bacon fat.
  3. Add carrots and onion, cook and stir for a couple minutes.
  4. Add garlic, stir continuously for a minute.
  5. Add cabbage and a couple quick shakes of celery seed, stir well, and cook over medium heat for 10-15 minutes or until desired doneness.
  6. Stir in vinegar, S&P and reserved bacon.

Winter Projects-Pineapple Jam, German Red Cabbage & Fast Rise Yeast Rolls

The holidays are over, it's cold outside, and we're looking for new things to try indoors. May I suggest a few cooking projects... I chose Pineapple Jam because it's made with canned pineapple that's easily accessible year-round. I have a Small Batch recipe here, and a robust Pineapple and Citrus Zest Full Batch here. Both are very good:@) Need to use up a different fruit, or want a different flavor? My Jelly and Jam Pinterest board can be found here.

This German Red Cabbage can be made either in a slow cooker or on the stove top. But no matter how you make it, it's very tasty and I encourage you to give it a try:@) 

And even though I know some folks might still be on their New Year's diet, I did want to add a bread project... These Classic Dinner Rolls are a ~faster~ version because we use rapid rise yeast. They do still require planning, but it is well worth the time! Or maybe you're curious about the Artisan Bread in 5 Minutes a Day, you can find that here.

So there you have a few ideas to try something new
 and help make the house smell great!

Christmas Side Dishes: Pea Salad, Corn Pudding, Cheesy Broccoli Casserole, and more...

When it comes to holiday meals, it seems to me that in my family, we have a little more wiggle room to try new things at Christmas than Thanksgiving. So... I have a few suggestions in case you're looking for something a little different this year, and one is make ahead, one uses a slow cooker, and one is just full of cheesy goodness:@) We'll start with this pretty, refrigerated, make stir and serve, Christmas Pea Salad. I love the red and green colors! If you want to get extra fancy you can use a mini cookie cutter in a star shape and add some red pepper stars to the top...

We all know oven and stovetop space are at a premium during the holidays, that's why I like to have a few Crock Pot recipes on-hand... I'll share a pic of Corn Pudding using Jiffy Mix, but also give links to Mixed Vegetable Casserole and Slow Cooker Stuffing.

This Frozen Broccoli and Cheddar Cheese Casserole is on my dinner list for this year, and I'm debating about giving it a twist and adding some cooked macaroni too... Kinda like a Broccoli Mac and Cheese, we'll see:@)

Finally, may I suggest giving cole slaw a little tweak by adding some unexpected ingredients... Apple, Walnut, Raisin (or Dried Cranberry) Coleslaw looks great, but tastes even better:@) This was a huge hit with my crew, and I think it's time to make some more!

Confetti Cole Slaw

The idea behind this Confetti Coleslaw is to use up some vegetables, make a pretty salad, and bump up the nutrition level in a favorite side dish. The inspiration was a pretty red bell pepper in the garden, ~and~ a new kitchen toy from HSN, a hand crank slicer/shredder:@) Simply add as many different colored vegetables as you'd like, and use your favorite cole slaw dressing recipe. Or I think a good poppy seed dressing would be nice too. Ooooh, how about bleu cheese dressing... Yep, the options are endless!
Shred it, mix it, eat it,
good stuff folks!

Cranberry, Apple and Caraway Red Cabbage -Slow Cooker, Small or Large Batch

This Cranberry, Apple and Caraway Red Cabbage is a nice slow cooker side dish for a pork, ham, or sausage meal. Honestly folks, I can see it served with turkey at Thanksgiving too! It's a little sweet and a little tangy, and I believe it can be eaten hot or cold. I also really like the subtle occasional bite of caraway seeds. And this is a great way to use up a little extra cranberry, I always seem to have some in the freezer. As for the amount of sugar, start with 2 tablespoons, cook for a couple hours, stir and taste... Add more if desired, you know your crowd:@) The recipe is easily increased for a larger slow cooker.
Another variation:

Cranberry, Apple and Caraway Red Cabbage
3 C shredded red cabbage
1 large apple, peeled, cut into chunks
1/2 C cranberries, fresh or frozen
1/2 small onion, approximately heaping 1/4 C
2-3 Tblsp sugar
2 Tblsp cider vinegar
1/4 tsp caraway seeds
1/4 tsp salt
few grinds of black pepper
  1. Add everything to vessel, place paper towel under lid, cook on low 3 1/2-4 hours.
  2. Stir and serve hot or cold.

Ham and Cabbage Salad

The temperature soared to a humid 94 degrees on Saturday, and in case you're wondering... Um, no, that's not normal for May 21st in Philly. Keeping cool and hydrated was priority number one. So, whether you want a nice cold salad and are out of lettuce, or are looking for more recipes that use cabbage, this Ham and Cabbage Salad made a nice easy meal:@) Honestly folks, it really doesn't even require a recipe, make it family size, or just a bowl for lunch (like I did here). Simply add a squirt of lemon and mix to your desired consistency with mayonnaise. The ham adds a salty component, cucumber cold and wet, corn sweetness, and the cabbage is filling. It's a nice combination.
This is a good ~use it up~ recipe if you happen to have some ham in the freezer.
I used cabbage I already had in the fridge,
a nice young head with some green leaves would be prettiest if possible.

And yes, please do replant those scallions!
or right in the garden:

Ham and Cabbage Salad-from Taste of Home
Small head of cabbage, approx 1 lb, sliced like coleslaw
4 small cucumbers
15 oz can sweet corn, drained well-I used frozen corn, cooked in microwave and cooled
8 oz ham, diced
1/3 C scallion, sliced, use white part too-save a little for garnish if serving company:@)
3/4 C mayonnaise
1 Tblsp fresh lemon juice
S&P to taste
~Mix everything well, serve chilled.

Grilled Sheet Pan Kielbasa, Cabbage and Potatoes

Whether you're spending more time outdoors, trying to keep the house cooler, or just don't want the house to smell like cabbage... This Grilled Sheet Pan Kielbasa Dinner with Cabbage and Potatoes was simple to throw together, and since I used a disposable pan, clean-up was a breeze:@) There really isn't a recipe, and you can vary the amounts by how many people are eating. Seasoning is just S&P, and of course I served it with some nice spicy mustard on the side. Yep, I really did enjoy this meal folks!

I started cooking with the food on separate sides.
This way it could be hotter on the left so the cabbage cooked more.
Then just mixed it all together at the end.
This pan was excessively large, but it made flipping the cabbage easy:@)

Grilled Sheet Pan Kielbasa, Cabbage and Potatoes
As much as you'd like:
Kielbasa, cut into bite size pieces
Cabbage, cut into bite size pieces
Potato, washed, pierced and partially cooked in microwave. I used 1 minute. Then cut into bite size pieces.
Onion, diced
Olive oil, enough to drizzle over everything
S&P to taste
  1. Heat grill to high, reduce to medium high.
  2. Add everything to disposable pan, drizzle with olive oil and sprinkle with S&P.
  3. Cook until desired level of doneness.
  4. Add more S&P to taste.
  5. Serve with  mustard.

ReView: Cold Oven Pound Cake, Sweet Chopped Cole Slaw & Barbie's Thanksgiving 2021

Well here we are folks, the countdown to Turkey Day has begun and many are planning the trek to Grandma's house for the holiday! You might like to try making a Cold Oven Pound Cake to take along... This is the Nordicware Gingerbread House cake pan, still a favorite of mine:@)

I know most families have a Thanksgiving menu with must haves that can't be tinkered with... If you have some wiggle room and are looking for a very good side dish, this Sweet Chopped Cole Slaw did get very good reviews from my crowd:@) It's a little bit easier because the cabbage is rough chopped and not shredded, I also like the pretty colors for the holidays.

Barbie and Ken were excited to be hosting Thanksgiving dinner this year and when folks asked what they could bring... Barbie's response was, whatever, and whoever, you'd like to, thank you! This created quite an eclectic mix of good friends, great food, and it was a holiday to remember:@) While Barbie was busy basting the turkey, Ken greeted the guests as they arrived...
Notoriously early, Barbie's best friend Midge arrives with the centerpiece, some extra chairs, and to see how she can help in the kitchen.

The girls that live down the block did some baking, they brought apple pie and sugar cookies.

Cousin Rube has a fresh wreath and a bottle of homemade wine from the farm... Always welcome😎

The appys have finally arrived! A Crock Pot of meatballs. As Ken bends in to kiss her cheek hello... Yes folks, Ken really likes those meatballs!

Some already have their hands full, and had a fruit tray delivered this morning.

And finally... An old college buddy shows up unexpectedly. Well... ~Maybe~ Barbie invited him as a surprise for Ken😉

Creamy Coleslaw with Sour Cream and Mustard

This Creamy Cole Slaw truly did live up to it's name! What made it different was using sour cream for the tang instead of vinegar, and of course sour cream adds some extra body too. It also calls for mustard powder. We have lots of wiggle room with the sugar. I cut the original recipe in half below, and might even try less next time, you know your crowd:@) If' you're like me and are always interested in trying new and different coleslaws, you might want to add this one to your list folks.

Creamy Coleslaw-adapted from Taste of Home
14 oz coleslaw mix ~or~ 8 C shredded cabbage and carrots
3/4 C mayonnaise
1/3 C sour cream
2 Tblsp sugar
1 tsp seasoned salt
1/2 tsp celery salt
1/2 tsp ground mustard-No ground mustard? Try adding a little squirt of yellow mustard instead
~Mix everything well, cover, refrigerate until serving.

Red Cabbage Slaw with Apples in an Orange Dressing

This Red Cabbage Slaw with Apples tossed in an Orange Dressing not only got a big thumbs up, but the words "refreshing, and reminds me of summer" were even tossed around during Sunday dinner at the end of February. While I did question the word summer... This is truly a vibrantly colored, crunchy, fresh, and healthy salad. Now, I've tried a lot of recipes for my coleslaw series here on the blog, but I have to say, this one gets my darn good label! Be sure to use the fresh parsley, it's key... Don't hesitate to give it a try folks, it might just become a favorite of yours too:@)
This is one of those salads that's best made and eaten the same day.

Red Cabbage Slaw with Apples in an Orange Dressing-from Spend with Pennies
4 C shredded red cabbage
3 carrots, shredded
1 apple, julienned
2 Tblsp fresh parsley, chopped
2 Tblsp orange juice
2 Tblsp vegetable oil
1 Tblsp sugar
1 Tblsp cider vinegar
1/2 tsp Dijon mustard
S&P to taste
  1. Mix everything well (I put it all in a Lock-N-Lock and gave it a few good shakes and kept flipping the bowl).
  2. Let mingle in fridge for an hour before serving.

Saturday ReView: Rustic Cabbage and Bean Soup & DIY Fire Pit for Barbie

The garden center had all orange pansies this year so I tucked one into my planter for the fall (we just had a good rain and some sun and it has colored up nicely since this pic!). This large jolly Jack had been languishing in storage for years, I decided to drill a couple holes in the bottom for drainage and bring him out for Halloween. As I walk out my door I'm greeted by this fun scene and I've been enjoying it, just wanted to share a smile:@)

I have to tell ya folks, in all of my years blogging, this Rustic Cabbage and Bean Soup goes way back to 2011 and it's still one of my favorites! (I'm thinking I need to whip up a batch and try to take an updated picture...) This is such a healthy and robustly flavored soup, and it's one of those that gets even better the next day. If you're a fan of cabbage, don't hesitate to try this recipe, I think you'll be happy:@)


And here's a fun fall craft for Barbie,
how about making a cute fire pit from a jar lid and some pipe cleaners here.
The only thing missing... Some itty-bitty 'smores:@)
I started with the cap from a jar of peanut butter and sprayed it a couple times with black spray paint.
I had some metallic eyelash yarn in my stash and glued it to the bottom, thought it might add a little shine.
You could also lay some tinsel or shiny pipe cleaners in the bottom if desired.

Also gave it a sprinkle of chunky gold glitter. 

Stacked up some dried twigs from the yard as logs, 
adding orange and yellow bump chenille pipe cleaners to look like flames around or between some twigs.  
I hot glued them in place. You could also wrap some wire around them.

When done, I gave it one last sprinkle of chunky gold glitter.

The only thing missing... Some itty-bitty 'smores😎

Lemon and Dill Coleslaw

We're big dill fans here at Pig In Mud, so it didn't take long for me to try this Lemon and Dill Coleslaw. You can tell I think something might be special if I break down and buy a fancy red onion:@) All the flavors worked well together, and this is a very nice change of pace if you're looking for a side salad that's a little different. I think the addition of lemon makes it a bit more summery too. This recipe can be easily scaled down, I aimed for half and we all enjoyed it with Sunday dinner.

Lemon Dill Coleslaw-from Neilsen Massey
8 C cabbage, shredded
2 C carrot, shredded
1 C red onion, thinly sliced
2/3 C fresh dill, chopped ~or~ 1 tsp dry dill-can add more to taste
1/2 C sunflower seeds-I did not have these
3/4 C mayonnaise
zest of one lemon
1/3 C lemon juice
1 1/2 Tblsp sugar
1/2 tsp lemon extract
S&P to taste
~Mix, let mingle for at least one hour in refrigerator, or up to overnight. Stir and serve.

Honey, Lime and Cilantro Coleslaw

I served this Honey, Lime and Cilantro Cole Slaw as a side salad, but it would be great as a taco or pulled pork sandwich topper too. The flavors all went together well and I love how colorful it is. If I had a red onion on-hand, that would have added even more color. This was a different coleslaw and a good one to try, especially if you have some extra cilantro to use up:@) Just mix and serve, no real marinating time required.

Honey, Lime and Cilantro Coleslaw
2 C shredded cabbage with carrots
1/8-1/4 C onion, thinly sliced-you know your crowd
1 Tblsp fresh lime juice
1 Tblsp honey
1 1/2 tsp vinegar-I used red wine vinegar
1 1/2 tsp olive oil
1/4 tsp hot sauce
S&P to taste
~Mix everything and serve.

Key Lime Yogurt and Jalapeno Cole Slaw

What else did I do with the Key Lime Yogurt I found at Walmart? Whipped up this Key Lime Yogurt and Jalapeno Coleslaw. I aimed for a slightly sweet slaw with a little bit of bite from the jalapenos. A little bite also came from freshly minced garlic, that's something I don't usually add to coleslaw, but I wanted to try it this time. I like that this is a nice quick slaw, one that's best mixed and served, no marinating time required:@)
 There really isn't a recipe folks, I just mixed things until I liked the way it tasted...

Key Lime Yogurt and Jalapeno Coleslaw
Approximately:
2 C shredded cabbage
1 jalapeno, cleaned and sliced thin
small carrot, grated
small clove garlic, finely minced
6 oz key lime yogurt
sprinkle of celery salt
light sprinkle of curry powder
sprinkle of vinegar
sprinkle of sugar
S&P to taste
~Mix, taste, adjust, enjoy.

Vanilla Scented Southern Cole Slaw

I saved the recipe for this Vanilla Scented Southern Cole Slaw the minute I saw it and knew it would be a great addition to my coleslaw series here on the blog:@) If you're looking for a slaw recipe that doesn't call for mayonnaise, this is a great one to try. What makes it different? The addition of mustard, vegetable oil and vanilla. And just look at that great color, this was a very nice side salad folks, don't hesitate to give it a try!

Vanilla Scented Southern Cole Slaw-from Nielsen Massey
1/4 C apple cider vinegar
2 Tblsp sugar
2 Tblsp vegetable oil
1 Tblsp Dijon mustard
1/2 tsp celery seed
1/2 tsp salt
1/2 tsp vanilla extract
1/8 tsp black pepper
4 C thinly sliced cabbage
1 C thinly sliced red cabbage
3/4 C shredded carrot
~Mix everything well, place in refrigerator until ready to eat, best served within and hour or two.

Crock Pot/Slow Cooker Pork Roast -Trisha Yearwood Recipe

I made this Slow Cooker Pork Roast using a sirloin pork roast and have to say it turned out great! This is one of those dinners that smells wonderful cooking for hours on a cold day and I do look forward to making it again. The easy (and very flavorful, love the addition of lemon) gravy is a nice little bonus too. It's not too late to give this a try for Oktoberfest/Crocktoberfest folks, or... Any ole Sunday dinner. I think you'll be happy you did:@)
May I suggest serving with German Red Cabbage with Apple-here.
Oh yea, we are hearty eaters here at Pig In Mud:@)
Approximately 2 lbs of pork takes about 6 hours on low.

Crock Pot Pork Roast a Trisha Yearwood Recipe-from Sparkles of Yum
2.5-3 lb pork roast, trimmed of fat
1 tsp garlic powder
1/4 tsp ground ginger
1/2 tsp dried thyme
1/2 tsp black pepper
1 Tblsp vegetable oil
2 C chicken broth
2 Tblsp lemon juice
1 Tblsp soy sauce
3 Tblsp cornstarch-or other thickener for low carb
  1. Sprinkle pork with salt.
  2. Mix dry spices and rub all over pork.
  3. Heat oil in skillet and brown meat on all sides.
  4. Place pork in 4-6 quart slow cooker-just make sure the Crock Pot is big enough to hold everything.
  5. Mix broth, lemon juice and soy sauce, pour over meat.
  6. Cover and cook on low 8-10 hours or high 4-5 hours-I used low.
  7. Remove meat from vessel and cover with foil.
  8. Pour liquid from vessel into 2 C measuring cup. Skim fat off of top. Measure 2 cups of liquid, adding water if necessary. 
  9. Pour 1 1/2 C into sauce pan, stir cornstarch into reserved liquid, then add to pan. Heat, stirring frequently until gravy is thick and bubbly. 
  10. Add S&P to taste.
  11. Slice pork and serve with gravy.

German Red Cabbage with Apple -Slow Cooker or Stove Top

I've been giving the slow cooker a lot of thought, and trial and error lately, and I've decided sometimes it works best for me if I use a combination of techniques... This German Red Cabbage with Apple is a great example of that. I started everything out covered on high for 1 1/2 hours and then took the lid off for the next 1 1/2 hours, still cooking on high, and gave it a stir whenever I passed by. This way the cabbage gets a nice head start by cooking hot, and then the excess liquid evaporates during the last of the cooking time. We all really enjoyed this pickled sweet/sour cabbage and I'll be adding it to occasional pork or sausage dinners going forward. Oktoberfest anyone???

Not sure what's going on with color of these pictures... The cabbage is actually a purple that's a shade or two darker, but you get the idea:@) 
I made a half batch in a 2 quart Crock Pot. You can click the original link to find the stove top instructions. I've given this my coleslaw label because it can be served hot, cold or at room temperature.

German Red Cabbage Recipe-adapted from Taste of Home
1 medium onion, halved and sliced
1 medium apple, peeled and sliced or diced-at least 1/2" dice might be best, the apple cooks down
1 medium head red cabbage, approximately 8 C shredded
1/3 C sugar
1/3 C white vinegar
3/4 tsp salt, optional
1/4 tsp pepper
  1. Make a couple layers of cabbage, apples and onions in vessel of slow cooker.
  2. Sprinkle top with sugar, S&P.
  3. Drizzle vinegar over top, don't stir.
  4. Place lid on slow cooker, turn to high, leave lid on. Cook for 1 1/2 hours, remove lid, stir and cook for 1 1/2 hours longer on high, or until cabbage is tender. Give it a few stirs during this time.
  5. Serve hot, room temperature or cold.

Oven Roasted Brussels Sprouts with Onion and Maple Syrup

I found some beautiful sprouts at the produce store and wanted to try something just a little different, so I made Oven Roasted Brussels Sprouts with Onion and Maple Syrup. Boy that was a good idea! I tossed them with olive oil, but if you have some bacon fat handy, that might be the only thing that could make them even better. I can't recommend this side dish enough folks and look forward to making it for Sunday dinner soon. Go ahead and add this to your fall meal plan, I think you'll be happy:@)
Bet you never thought you'd hear the words 'whimper worthy' and Brussels sprouts in the same sentence:@)

Oven Roasted Brussels Sprouts with Onion and Maple Syrup
Fresh Brussels sprouts, trimmed and cut in half, or quarters if extra large-like mine
Onion, large dice
olive oil
S&P
maple syrup
  1. Prep sprouts, add sprouts and onion to baking sheet. I covered my sheet with foil for easy clean-up.
  2. Drizzle with enough olive oil to coat well, mix with hands and spread out into single layer. 
  3. Sprinkle with salt and pepper.
  4. Bake at 400 degrees for 20 minutes.
  5. Remove from oven, stir and drizzle with enough maple syrup to coat well. 
  6. Stir again and bake for another 10 minutes.
