Snapps Loaded Baked Potato (or any flavor) Stuffed Jalapenos

We can find Snapps appetizers in the frozen foods section of Dollar Tree and Walmart, and a new (to me) flavor caught my eye... I had these Snapps Loaded Baked Potato Stuffed Jalapenos for lunch over the weekend and it was a very nice lunch indeed. I let the potato sticks sit on the counter while I cleaned the jalapenos, then cut them in half and placed them on the peppers. You may want to add a little cheese to the pepper first to help the Snapps stick to the pepper. And a little extra cheese is never a bad thing:@) I put them in the air fryer at 375 for about 7 minutes. Every air fryer is different, you may need to check your timing or temperature. These were served with a drizzle of ranch dressing. Sour cream, or jalapeno ketchup would be nice too.

Deviled Egg Stuffed Sweet Mini or Jalapeno Peppers

These Deviled Egg Stuffed Sweet Mini and/or Jalapeno Peppers made a very nice lunch. The inspiration was the itty red peppers on the plant in my garden, and I picked a couple small jalapenos too. My favorite bites were the sweet red ones. I simply mixed up some egg salad using mayonnaise and mustard to mimic deviled eggs, and made sure to cut the whites smaller than traditional egg salad. For ease of stuffing, add the filling to a disposable icing bag, just cut the hole a little larger for the whites. If I had a chicken coop this would have been a total garden lunch:@)

Now, as a general rule... I stay away from bugs, especially when it comes to food. But I thought these little ant picks were kind of cute for a summer or picnic charcuterie tray, and really think kids would get a kick out of them:@) They'd be fun for Halloween too...

And for a more charcuterie look, I've added crackers and think a small bowl of pickles would have been perfect... As a point of reference: I picked six very small peppers and used two hard boiled eggs.

My mini sweet pepper plant 7/5/24:

Deviled Egg Stuffed Sweet Mini or Jalapeno Peppers
  1. Cut peppers in half long ways, clean out seeds and membranes. I used a melon baller.
  2. Mix up some deviled egg salad, be sure to fine dice the egg whites.
  3. Fill peppers.
  4. Garnish with parsley and chives, or paprika, or seasoned salt if desired.

Piggy Poppers, Garden Trellis Cushion, & Barbie Hair Saver

Back when I was a kid... We would slice a hotdog in half long ways, butterfly it open, and top it with cheese. It would then go into the oven until the cheese melted. Good stuff folks:@) I thought I'd try that concept with these Piggy Poppers. It's another version of my Stuffed Jalapenos, and a tasty alternative if you're trying to save a few calories on the bun. 

Aldi has the regular size hotdogs and the 8 pack bigger size, I used the bigger ones and cut the dog in half, then into quarters. Just make them fit into your jalapenos...

I mentioned the idea of using a pool noodle at the top of a trellis to help the plant gently bend over the top instead of the vine possibly bending/kinking here. Someone tossed a green one out on trash day... Yep, I like the way green looks in the garden:@)

And finally, if there's a Barbie in your life you know the hair can quickly become a hot mess unruly... I love the idea of recycling garlic bags as hair savers, it works especially well with straight hair dolls and is really great at keeping bangs in place! This is a simple no-sew project that only requires a pair of scissors. It works well with either long or short hair, just cut the mesh to the length you need and slip it over the doll's head.

This is the type of garlic bag I use:

Piggy Poppers
Jalapenos, cut in half and cleaned of seeds and membrane
Large hotdogs, cut in half and quartered
Cheese of choice, slices to cover hotdog
  1. Place hotdog slice in each jalapeno.
  2. Bake at 357 degrees for about 12 minutes.
  3. Remove from oven, carefully add cheese to jalapeno and cover hotdog with cheese.
  4. Return to oven for about a minute or until cheese has melted.
  5. Serve with mustard, ketchup, BBQ sauce, etc, if desired.

Hot Dog Love♥Stuffed Jalapeno Pigs in a Blanket, Deviled Dogs & Amish Sweet Heat Mustard

Sometimes I think hot dogs are a little underrated... Just sayin'... So I thought we'd put together a round-up of a few fun ideas for the last couple weeks of football:@) Let's start with Stuffed Jalapeno Pigs in a Blanket. Talk about elevating a snack! These take a little work, but are worth every second. Maybe make half with 'penos, half the good old fashioned way with just the roll and weenie.

These Deviled Hot Dog Bites are a retro 1952 recipe from Franks, and the perky taste will wake the crowd up at half time for sure:@)

And the last recipe is for a condiment, we all ~loved~ this Amish Sweet Mustard Spread for hotdogs or pretzels. Heck, it's so good you'll want to smear it on everything! Don't hesitate to try it folks, I think you'll like it:@)

Pepperoni Poppers, Jalapeno or Sweet Peppers

These Pepperoni Poppers couldn't be easier and you can mix the peppers up to suit any crowd, some jalapeno and some mini sweet peppers. I say it all the time folks, things don't need to be complicated or involved... I just estimated my amounts, aimed for half cream cheese, half mozzarella, gave it a shake or two of Italian seasoning, and chopped up some pepperoni-done. This ended up being my lunch on a snowy Saturday and I was very happy indeed:@) And naturally, this just screams football food!!!

Multi colored peppers would be pretty for a party.

Pepperoni Poppers
Peppers, as many as you'd like, sliced in half, de-seeded
50/50 cream cheese and mozzarella
Italian Seasoning, a few shakes
Pepperoni, small dice, as much as you'd like
  1. Mix all, stuff into peppers.
  2. Bake at 400 degrees for 15-20 minutes. I like 15, the peppers still have a little bite.

Jimmy Dean Sausage Stuffed Jalapeno Poppers

The jalapeno plant in my raised bed has been producing, so I whipped up some Jimmy Dean Sausage Stuffed Jalapeno Poppers. Oh my, that was a very nice snack:@) Actually it was on a Sunday where the boys weren't coming to dinner, and both the Eagles pre-season and Phillies were on TV... I called this dinner! This is a versatile recipe, start with the Jimmy Dean recipe and change it up any way that sounds good. I'll list a few suggestions below. We can also use those colorful little sweet peppers in addition to, or instead of jalapenos.

Possible additions:
Garlic powder, seasoned salt, black pepper, parmesan cheese, 
(I added the spices to these and sprinkled the tops with parm).
Wrap in partially cooked bacon, or crescent rolls.
Top with breadcrumbs or Panko breadcrumbs.
Use different flavors of sausage.

Jimmy Dean Sausage Stuffed Jalapeno Poppers-from Jimmy Dean
16 oz Original Jimmy Dean Sausage
8 oz cream cheese, softened
8 oz shredded cheddar cheese
Approximately 32 medium jalapenos
  1. Cut peppers in half lengthwise, clean seeds and membrane.
  2. Fully cook sausage and crumble it small.
  3. Thoroughly mix sausage, cream cheese and cheddar cheese together.
  4. Stuff jalapenos, slightly mound the tops.
  5. Bake at 425 degrees for 10 minutes or until lightly browned.
  6. Can brown tops under broiler if desired.

ReView: Super Bowl Snacks & Ken Serves Valentine's Breakfast

Well this sure is a busy weekend! I guess we could combine it all and say I Super Bowl Sunday ~or~ Have a Super Valentine's Day... Any way you look at it we have two big celebrations coming up. Of course the Super Bowl is all about snacks and party food (and maybe your office block pool if you have one:@) While poppers are great, we can do a lot more with stuffed jalapenos folks, and with the right ingredients, these Cheeseburger Stuffed Jalapenos can even be a low carb snack.

Meatball Sub Stuffed Jalapenos

How about a hearty football munchie or lighter lunch that doesn't call for bread or a roll... These Meatball Sub Stuffed Jalapenos can even fit into a low carb meal plan if you use meatballs and sauce specifically made for that:@) Super simple and exactly as it sounds, fill cleaned pepper halves with cooked meatballs, add some pizza or pasta sauce, a light shake of Italian seasoning, and top with mozzarella. Very filling and there are lots of options for the meatballs themselves, both homemade and store bought. 

Meatball Sub Stuffed Jalapenos
  1. Heat/cook meatballs and sauce on stovetop or in microwave.
  2. Bake cleaned jalapeno halves at 375 degrees for about 5-8 minutes (firmer-5, softer-8).
  3. Stuff with meatballs, cut meatballs in half if necessary, add a shake of Italian seasoning, and sprinkle with mozzarella.
  4. Place under broiler for a couple minutes, until cheese begins to brown.
  5. Before serving drizzle top with more sauce and sprinkle with parmesan cheese, a little messy, but oh-so-good!

How to Make Air Fryer Jalapeno Poppers & what makes it a jalapeno popper?

I've made a ton of stuffed jalapenos here on the blog, love them! My no-heat jalapeno plant is still ~very~ happy and truly overachieving... So I decided to treat myself to some Air Fryer Poppers for lunch one day. This started me thinking, with so many recipes and variations out there, what's the difference between a stuffed 'peno and a popper? To me, it comes down to one thing, cream cheese. We can make a stuffed pepper with anything we'd like, but add a little cream cheese to a jalapeno, and it's a party:@) Here's what I do to make poppers that are a tad healthier and a tad lighter in calories, yet still taste great! No breading, no deep frying, and this will work with an air fryer, or in the oven if you don't have one (although the oven might take a little longer to bake.)
I used my Instant Pot with the Mealthy Air Fryer Lid.

Air Fryer Jalapeno Poppers
  • Preheat air fryer at 400 degrees while preparing peppers.
  • Slice peppers in half lengthwise. Remove seeds and membrane if desired. A melon baller works great!
  • Place on air fryer rack cut side up. Bake at 400 degrees for 3-4 minutes. 3 if you like them a little firmer, 4 softer.
  • Remove from air fryer, place cut side down on paper towel to drain, and allow to cool until you can handle them.
  • At this point I added some tin foil to my baking rack, I didn't want cheese to melt all over...
  • Mix softened cream cheese with other shredded cheeses if desired, I like cheddar. Spread the cheese inside the pepper.
  • Add protein of choice if desired, I added some small diced leftover buffalo chicken. (You could mix the meat in with the cheese too, either or.)
  • Top with more shredded cheese.
  • Sprinkle with panko or regular bread crumbs if desired. I did not use them this time.
  • Bake at 400 degrees for about 3 more minutes or until cheese is melted.
  • Serve with bleu cheese or ranch dressing, hot sauce, celery sticks, etc.

"No Heat" Jalapeno Plant Review & BBQ Chicken Stuffed Jalapenos & my favorite jalapeno pickle recipe

After suffering a severe set-back this spring I am please to report that my jalapeno plant is loaded with peppers:@) I tried a new variety called Tricked You, it was written up to have all of the Jalapeno flavor with none of the heat. A couple nice size ones were used for these BBQ Chicken Stuffed Jalapenos. I was very curious to check out the heat... I cut the pepper in half and ran my finger over the membrane, no heat. Took a bite of only membrane, no heat. Cored the seeds out and ran finger over what was left... No heat. But just as advertised, still tasted like jalapeno! So if you're looking for a kinder, gentler version, you might want to give these a try folks.

BBQ Chicken Stuffed Jalapenos-very simple and basic, no real recipe:
  1. Shredded chicken liberally doused with your favorite BBQ sauce.
  2. Stuff peppers cut in half lengthwise. Clean seeds and membranes first if desired.
  3. Optional: a light sprinkle of panko breadcrumbs
  4. Bake at 375 for approximately 12-15 minutes.

Buffalo Shredded Pork Stuffed Jalapenos with Celery and Blue Cheese Dressing & New Jalapeno Plant

~Many years ago~ when I started my stuffed jalapeno series for the blog, I simply doused chicken with hot sauce and baked some 'penos... These Buffalo Shredded Pork Stuffed Jalapenos call for just a couple more ingredients and are a very nice variation. Another thing I tried, notice the disposable tray? Yep, I cooked these on the grill:@) My pork was just some very inexpensive "pork cubes" I picked up at the supermarket and cooked in the Crock Pot until it reached shredable stage. Then froze it flat in a zip top bag, that way I could still break off only enough as I needed at one time.

While I love the flavor of jalapenos, I do like to clean mine well to tame a bit of the heat:

I added a new pepper to the planters this year,
Tricked You! They say it has all the jalapeno flavor but no heat, we'll see:@)

Shredded Pork Stuffed Jalapenos
Jalapenos, sliced in half lengthwise and cleaned-or leave the seeds in, you know your crowd
Enough pork to stuff the amount of peppers you have
Celery, small dice, about 1/4-1/3 as much as meat
Wing sauce, or hot sauce, your favorite brand-I used Frank's today
Blue cheese dressing for drizzle
Extra hot sauce for serving
  1. No real recipe here folks, just mix meat and celery with enough hot sauce to coat well and make wet. 
  2. Stuff peppers, place on tray and cover with foil. Bake on covered grill, medium heat, 15 minutes for firmer peppers, 20 minutes if you like them softer. I turned the tray half way.
  3. Drizzle with blue cheese dressing and serve with bottle of hot sauce on side.

Buffalo Pork Tenderloin -Two Ingredient -Slow Cooker

I had one medium size pork tenderloin that had been in the freezer longer than planned... So I decided to toss it into the Crock Pot with nothing more than a coating of Walmart's Great Value Buffalo Wing Seasoning Mix. It cooked up great, shredded beautifully while hot, sliced perfectly chilled, and had that wonderful warm Buffalo Sauce flavor profile. This is a nice starting point for several serving options:@)


Here I used the shredded meat to make some Pork Nachos. 
(Pork, cheddar cheese, finely diced celery and peppers optional, pickled jalapenos optional. 
Pile tortilla chips high with ingredients, microwave or heat in oven until cheese melts. Serve with more hot sauce). 
It would also be great in Buffalo Macaroni Salad, or served on top of some Mac and Cheese
or stuffed into jalapenos, or turned into a hot or cold sandwich.
See, this is versatile stuff folks:@)

The seasoning I used:

Two Ingredient Buffalo Pork

  1. Place pork in vessel of 3-6 quart slow cooker and liberally sprinkle all over with the envelope of Buffalo seasoning. I used the whole envelope and did not add any liquid.
  2. Cover and cook on high for 4 hours or until done, or on low for 6-8 hours or until done. Food police say 145 degrees.
  3. Shred, adding a little cooking liquid if needed for moisture (or chill and slice).
  4. Use in any dish desired.

Bacon and Cheddar Cornbread Stuffed Jalapenos And a New Aldi Seasoned Salt

It's been a while since I treated myself to one of my favorite munchies... These Bacon and Cheddar Cornbread Stuffed Jalapenos were worth the wait. I started with a Jiffy Mix and added some pre-cooked real bacon bits and a handful of cheddar cheese. What makes them extra flavorful is a hearty sprinkling of your favorite seasoned salt once out of the oven. Stuffed jalapenos are a great snack for sports watching, ~~~anybody remember sports??? Sniff. Oh well, I made these back in January for a Flyers game and they were very tasty:@)

I didn't do any strict measuring folks, just stirred everything up. 
If there's any leftover mix, you can bake it as a muffin and have it for breakfast.

Also in January, I found a new Hot Sauce Seasoning at Aldi.
If you like hot sauce, you'll love this stuff folks:@)
It is literally hot sauce in a powdered form and I've been sprinkling it on everything.

Bacon and Cheddar Cornbread Stuffed Jalapenos
Jalapenos that have been cut in half lengthwise and cleaned.
Jiffy Cornbread Mix, plus ingredients on box
Cooked and crumbled bacon, as much as you'd like-I added about a hearty 3 Tblsp
Handful of shredded cheddar cheese-I probably added a hearty 1/4 C
  • Mix everything, spoon into jalapenos.
  • Bake at 375 degrees for 12-18 minutes or until cornbread is set.
  • Sprinkle with seasoned salt and serve with cold beverage of choice.

Saturday Snippets-Playoff Weekend! Tiered Tray, Party Supplies, Vintage S&P, Munchies & More

We're ready for some football here at Pig In Mud!!! The Philly Faithful are still believing in St. Nick Foles and we have our fingers crossed for a win tomorrow in Nawlins:@) I put together a quick football centerpiece and my favorite thing about it is the great items I found on clearance! The penalty flags were marked down to 10¢ (and may sit next to me during the game to throw at the TV as needed...).

This pic was from before the Bears game last week. Eagles cocktail napkins were marked down to 10¢ a pack a few years ago. And the battery operated candle was half price after Christmas at Walmart, it's kind of neat the way the 'wick' actually wiggles around creating a flickering effect.

Walmart had an end display of party goods, I saw a lot of similar items at Party City too. 

I found this ~really~ adorable old salt and pepper set (egg holder?) nosing around Etsy HERE.
But alas... It's not for my team.
