Buffalo Chicken Mini Muffins

Don't know if you heard, but the Super Bowl is coming up... That's like the biggest snacking day of the year:@) I couldn't get the Pepperoni Pizza Puffs off my mind, they sure were good. So I decided to see how Buffalo Chicken (or Pork) would work out, and they were really good too!
Do you see that brown crusty cheese? Oh yea, I may have whimpered...
This is another fun play on wings that's a little easier to eat and make.
My Tip: If you find a recipe you like, think of different flavor combinations to enjoy it:@)

Buffalo Chicken or Pork Mini Muffins
3/4 C A/P flour
3/4 tsp baking powder
pinch of salt
1/4 C + 1/8 C milk
1/4 C + 1/8 C hot sauce-your favorite, I like Crystals or Frank's
1 egg, lightly beaten
1 C shredded cheddar
1 C chicken or pork, cooked and finely shredded
Bleu cheese dressing for dipping
  1. Grease a 24 cup mini-muffin pan-I used Baker's Joy.
  2. Mix first 3 ingredients in large bowl.
  3. Add milk, hot sauce and egg to dry ingredients, mix.
  4. Stir in the cheese and meat.
  5. Let sit for 5 minutes.
  6. Fill muffin cups with approx 1 Tblsp batter.
  7. Bake at 375 degrees until puffed and golden, 20-25 minutes.
  8. Serve with sauce for dipping.
  9. Makes approx 24.

  3. These are darling snacks. I am not a fan of wings. I just made lemon curd for the first time. It turned out well. Made me happy.

  9. Oh this looks good, Lynn. I might even like it better than the pepperoni...Christine

  10. Another winner, Lynn! Aren't you the creative cook??!! These look like good super bowl treats.

  11. I don't need to think of another flavor combination with this! The muffins look delicious.

  12. I'm not a huge football fan but I think I'd sot through a whole game if I had a plate of these to nibble on! :)

  13. We LOVE buffalo chicken. I copied this. Thanks so much!

  14. I have some left over pork. I am going to have to make this. It looks really good.

  15. "I may have whimpered" LOL! Another oh so perfect snack for the big game Lynn! I know you're a football aficionado, but the best thing about the Super Bowl for me is the commercials and snacks, I have some menu planning to do :)

  16. These sounds awesome! Pinned for later! Stopping by from Miz Helen's, haven't visited in a while! (3 kids gets in the way of blog reading for some reason. hahaha)

  17. Now that is my kind of muffin. It looks fantastic. Thanks for sharing this one.

  18. Do I have to wait until Super Bowl Sunday? If these are as good as they look, I want some now!!

  19. These sound so delicious and so do the Pizza Puffs, Lynn! We are carb-restricted around here, but I may try substituting almond flour for the A/P that's called for in both of these recipes. Thanks for always sharing such deliciousness!

  20. Oh my word! Perfect for Super Bowl Sunday!

  21. Wonderful and different recipes. Makes me hungry, just looking at your pictures.

  22. This would be so much easier to messy wing sauce up to the elbows. I bet the house smelled amazing when these were baking!

  23. Hi Lynn, I'm always looking for buffalo wing type recipes and this looks perfect! Now, is the hot sauce you mention something like tabasco???? I'm not sure there is even 1/4 cup in a bottle! And what do you use to put out the fire? Linda

  24. We love everything with the buffalo wing flavor so I will be making these! Visiting from Foodie Friday. It's nice to meet you :-)

  25. Hi Lynn,
What a great appetizer, we will just love these litte goodies! Hope you have a great weekend and thanks for sharing your tasty recipe with Full Plate Thursday.
    Come Back Soon!

  26. There you go again with those incredible little bite-sized flavor bursts. Buffalo chicken sounds amazing.

  27. I made these tonight, and they were delicious. We were low on Tabasco, so I used just under a 1/4 c with a dash of cayenne and a dash of black pepper. The heat was perfect for our preferences. I also cooked them in the regular size muffin pan. The time was the same, and they served up nicely as "buffalo chicken cakes" on a bed of Bibb lettuce with bleu cheese dressing. Thanks for the recipe!

    1. Always great to hear someone liked the recipe-thanks:@)

  28. Oh, those look so yum! can't wait to give them a try.

  29. Saw these on Blondie's blog. OMGosh......they look so yummy!!! Really want to try these!!

  30. Just made these and they are AWESOME! Didn't have Baker's Joy, but spray oil worked fine, so not to worry. I can see making these with leftover pork or roast beef just as easily.

Thanks for stopping by!
