Two Ingredient Salsa Potatoes in Electronic Pressure Cooker

On today's episode of Frugal Living-Squeeze that Penny til it Squeals...
I made these Salsa Potatoes because I had about a cup of leftover salsa. They'd be an easy and zesty 15 minute side dish for grilled meat. A bonus, this tastes great at room temperature and since it's only salsa and potatoes-it's perfect for BBQ's and picnics. Truthfully, I prefer it at room temp. An extra bonus, if you use an electronic pressure cooker♥ you won't heat the house up this summer. An extra-extra bonus, if you happen to have some potatoes leftover after dinner, they'd be perfect with over easy eggs in the morning. Wow, I think they're worth trying, how about you?:@)

  Now, I acknowledge these potatoes aren't super model pretty (keeping things real folks, scooped from PC and plopped into bowl)...
But they are pretty darn good:@)
There is enough liquid in the salsa that you don't need to add any water to the pressure cooker. Full disclosure-the potatoes may stick a little to the bottom of the pot. I might rub a little bacon grease on the bottom of the pot the next time.

Salsa Potatoes
  1. For each pound of potatoes add one cup of salsa.
  2. Cut potatoes into approx 1" cubes, add to pressure cooker, top with salsa-do not stir.
  3. Cook on high pressure for 6 minutes. (Smaller diced potatoes would cook in less time.)
  4. Use automatic release.
