Cheesecake Filled Strawberries

Versions of these strawberries are everywhere, I've seen them on a bunch of blogs and all over Pinterest. So I just had to try them! They are pretty, taste great, are very easy to assemble and look impressive! My contribution would be chocolate... I gave some of them a light dusting of cocoa powder and also think removing the stem/leaves and dipping the bottom in melted chocolate would be very good too.
Oh, and I forgot to mention... There's no baking or cooking involved. Yea, I thought you'd like that:@)

Updated to add: I had one extra large strawberry leftover (ok, I may have stashed it away)... 
Added it to my bagel this morning-a very nice way to start the day!

Cheesecake Filled Strawberries
At least a quart of strawberries, washed and dryed
8oz cream cheese, softened
1/2 C powdered sugar
1/4 tsp vanilla
graham cracker crumbs to sprinkle on top, optional-I didn't use them
cocoa powder for dusting, optional
melted chocolate or candy melts for dipping the bottoms, optional-this is a fun idea!
  1. Mix cream cheese, sugar and vanilla with a hand held mixer until smooth.
  2. Fill a disposable icing bag (or strong sandwich baggie) with cream cheese.
  3. Cut berries to about 1/4" from bottom, then turn 90 degrees and cut them again (making a cross).
  4. Separate berries with your fingers a bit and squeeze cream cheese into the center. You might need to move the bag side to side to fill the whole berry with cream cheese.
  5. Dust with cocoa powder or dip bottom in chocolate if desired. If dipping them place on wax/parchment paper or silicone liner until chocolate sets.
  6. Store in fridge until ready to eat.
  7. Berry size varies greatly... You'll get at least 20 large berries from this and if they are smaller, you'd get many more!
