Chipotle Black Bean Dip!

Hi everyone! I'm happy to be joining Seasonal Sunday and Foodie Friday today! Even though my Personal PIGskin Challenge has ended, I wanted to add one more easy dip in case you want something different for the Super Bowl. Should be a great game!
Chipotle Black Bean Dip
Trust me, what this lacks in color, it more than makes up for in flavor-Oh Momma!

Chipotle Black Bean Dip
1 can drained and rinsed black beans (he says reserve the juice)
1 rinsed, seeded medium sized chopotle
1 Tblsp Adobo sauce
Juice of 1/2 lime
1 clove garlic, small
Salt to taste (you do need to add some)
Blend all in a food processor. He suggests adding the bean liquid until you get the desired consistency.
Serve with chips, veggies, anything really.

Notes:
  • This is one of those sneaky, addictive dips! Luckily, it's not too bad for you.
  • I suggest rinsing the beans, and if you need to add more liquid simply use more lime juice.
  • Chipotles are smoked jalapeños, so they do have some heat!
  • Chipotles in Adobo come in a small can in the Mexican food isle of supermarkets and Walmart.
  • I have a couple recipes that use chipotle's but never a whole can of them. I place one or two peppers on a silicone or parchment lined cookie sheet, topping them with the sauce, they freeze very well. Store in a zip top bag.
  • I ended up using one chipotle with however much sauce was frozen to it, and I did remove as many seeds as I could.
This recipe gave me a chance to use one of my favorite kitchen gadgets, my Food Processor!

  3. I can definitely tell that this would be so flavorful, despite the color, by having the chipotle and adobo. Yummy! I am going to try this.

  8. We really like the chipotle in Adobo and the black beans will have a great earthy taste to go with. I have a feeling this is going to be a hit.

    Love your pretty frilly dish with the rustic feel of the chips and dip..very nice.

  19. This looks great and easy, AND I have everything on hand. I use the Chipotles in Adobos very often. Freezing them is a good tip, but I usually put them in a mason jar with a tight seal on it. I use them a lot, and I never have had any go bad. I am going to do this this afternoon to go with our super-bowl fare: fajitas!
