Hearty Hot Beef Dip -Original Little Dipper Crock Pot Recipe, Low Carb Option

One of my favorite things to find while nosing around on-line are old original recipes. I was tickled to see this Hearty Hot Beef Dip that came (still comes?) with the Little Dipper Crock Pot. My crock pot came from the thrift store, sans recipe booklet... This is a nice easy little dip to toss together for New Year's Eve, a football playoff party (yep, we're still in it!) or any time you're in the mood for a warm, creamy and substantial munchie:@)

Notes:
  • I suggest placing a paper towel under the lid to collect condensation and keep the dip nice and thick.
  • It calls for half of a package of dried beef... That leaves enough meat for one nice breakfast of Creamy Chipped Beef. Or, if you'd like a ~seriously meaty~ dip, add the whole package, there's plenty of cream cheese.
  • My cream cheese was cubed but cold, it took 1 hour to get hot so it could be mixed and smooth.
  • The recipe doesn't call for it, but I gave everything a thorough stir after the cream cheese melted.
  • As with most of these cream cheese dips, cold leftovers are ~amazing~ schmeared on a bagel:@)
  • I used Half and Half instead of milk and subbed a heaping Tblsp 1/8" diced yellow onion for the scallions.
  • And I believe (minus the crackers or bread) this dip would be considered low carb too. 

 Don't hesitate to give this one a try folks!

  5. This is one of my old favorites Lynn, and I haven't made it in a long time! It is perfect for a Little Dipper pot! My daughter stuffs baby new potatoes with it, so good! Happy New Year!

  8. Thank you for this recipe. I had it many years ago, but it got lost in one of my (far too many) moves, long before the Internet existed, so I couldn't even remember the name of it. Now I'll get to enjoy it again :-) !
