I'm guessing this is a pretty good low carb munchie option too.
Chubby jalapenos, cut in half lengthwise and cleaned of seeds and membranes
Crumbled Italian sausage, cooked with peppers and onions
Any other pizza topping additions you'd like, small diced
Mozzarella cheese, about 1/4 as much as the topping mixture, save extra for topping
Pizza sauce, your favorite, just enough to lightly wet the above ingredients
Oregano for topping
- Mix everything and spoon into jalapenos. Place 'penos on foil lined baking sheet for easy clean-up.
- Bake at 375 degrees for 12-13 minutes. Remove from oven and turn on broiler.
- Top peppers with extra mozzarella and sprinkle with oregano, place under broiler until cheese is golden brown.
- Remove from oven and let sit for five minutes or so before serving.

Who could resist??? Love that these have Italian sausage---would be great to have these on a platter with some bacon wrapped ones, too. Double yum!
ReplyDeleteMy jalapeno plants were pathetic this year! Didn't help that we have been redoing our deck all summer and alas - it still isn't done. Hubby finally emailed them and asked if they wanted us to take as long in paying them as it has taken them to finish! Miracle - they came out two days later after not seeing them for three straight weeks - but still haven't finished!
ReplyDeleteThe peppers are so cheap at the store, that I have just bought them. I think I could eat they whole batch. Stuffed Jalapenos are some of my favorites.
My hubby would love these!
