I didn't plan on peeling the apple, just wasn't paying attention.
And speaking of not paying attention... I only used 1/3 C celery, cucumber and onion too...

One other suggestion is, taste it after it's all mixed,
you might want to add a touch of sugar to cut the pucker-you know your crowd...
I didn't add sugar but wanted to toss that thought out there.
1 1/3 C small diced Granny Smith apple-one large apple
2/3 C small diced celery-I used 1/3 C
2/3 C small diced cucumber-I used 1/3 C
2/3 C small diced red onion-I used 1/3 C
1/4 C minced fresh cilantro
1/4 C cider vinegar
2 Tblsp lemon juice
1/4 tsp salt
Mix everything and serve with tortilla chips.
Eat well and have a happy day:@)

ReplyDeleteOoh that sounds really good. That's the type of salad that I would like to receive in a little plastic cup at the deli when I order a sandwich. We have three choices, and I always struggle and get the pasta salad. xo
