Banana Bread

Hey everyone! If there's one thing I know with absolute certainty, it's that there are as many Banana Bread recipes out there as there are baking bloggers! Thought I'd add the one I use because I made it for the office... and it's blog fodder:@). I like cupcakes, they are easier for folks to grab and bake faster.
Wish I could say it's an old family recipe, but the truth is, I don't remember where I copied it from. I just have an old discolored index card in my handwriting. Been making it for over 28 years and it's the one my boys grew up eating. This recipe made 13 monster cupcakes, I think you could easily get 16 normal sized ones out of it. I always use paper liners, for a 5x9 loaf pan, be sure to grease and flour the pan.

Banana Bread
1/2 C shortening
1 C sugar
2 eggs
2 large bananas
1 tsp vanilla
1 3/4 C A/P flour
1 tsp baking soda
Walnuts-optional
Sanding sugar for top-optional
  1. Cream shortening and sugar.
  2. Add eggs, mix well.
  3. Add bananas and vanilla, mix well.
  4. Add dry, mix well.
  5. Fold in nuts, divvy up into cupcake liners and sprinkle sanding sugar on top if using.
  6. Bake at 350 about 18 minutes for cupcakes, it's been years since I've made the loaf size... I'd guess about 50 minutes, but that's just a guess.
Totally unrelated note: Philadelphia has turned into Fog-a-delphia in the mornings! This has been the weirdest weather I can ever remember... almost afraid to see what the summer heat and humidity brings.
Please ignore the hideous tree my neighbor is trying to "save", ugh...

  4. Good morning Lynn, I have made various recipes over the years. I think 28 years of making this one is a good one to try.

    Our weather is terrible this am and I have quilting class. It is 8:38 and black as can be. Sigh!

    There is no such thing as too many banana bread recipes! I love the muffin idea...I never thought of that! Wouldn't cream cheese frosting sound so good to top it off? YUMMY!

  13. So many people love banana bread I'm not surprised there are so many variations on it - just like chocolate chip cookies! I love banana bread, muffins, whatever. These look delicious.

    I think it's time your neighbor gave up on that tree!

  16. Yum yum banana bread and I want it with walnuts. Well in the fog the tree is not as noticeable. Yes, it seems most of the country is having strange weather. At least we are starting out with a lot of rain.

    Great idea to make the bread in individual serving sizes. I had to laugh at your exercise in patience - now that is quite a tree to be saving!

  23. Why in tarnation have I never thought to bake banana bread into cupcake liners??? You're right, it would cook faster & you wouldn't have to be concerned about the middle being done all the way.

    Thanks for the tips about separating bananas & freezing them whole. I've always cut the into little coin shapes, sprinkled with cinnamon & then frozen them on a tray, putting them into a zip-lock freezer bag later. Great to snack on & healthier than candy.
