Creamy Tomato Salad

My son brought me some grape tomatoes from his garden-oh yea, life is good:@) I have a few tomato salads on the blog that are pretty healthy and fairly low calorie... I decided to really celebrate the harvest and fatten this Creamy Tomato Salad up a bit! All of these flavors marry beautifully and don't hesitate to add some diced cucumber if you'd like. But it was all about the tomatoes for me today...

As with most things there are a ton of different recipes out there, I just used what sounded good to me.

Creamy Tomato Salad
Any combination:
up to 3 large tomatoes or up to a 2-3 C sliced grape tomatoes or some tomato and a cuke diced

Dressing:
1/2 C sour cream
1 Tblsp sugar
1 Tblsp cider vinegar
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dried dill weed
S&P to taste
  1. Mix all dressing ingredients and let sit for at least 30 minutes in the fridge, covered.
  2. I suggest not adding the tomatoes until you're ready to serve. Tomatoes just have more flavor at room temperature and I like the dressing better when it's not watered down from the tomato/cucumber juice.
