If you have a peach but no tomato, you could substitute Rotel, just drain it first.
Fresh Peach and Tomato Salsa
1 C peach, diced-peel it if you'd like, I didn't
1 C tomato, diced
1/4 C sweet onion, diced
1 medium jalapeno, cleaned and small diced-if you like heat, leave in the seeds and/or membrane
1 small clove garlic, minced fine
juice from 1/2 lemon or lime
fresh cilantro finely minced in a perfect world, 1 tsp Cilantro Salt in my world
a few hearty grinds of black pepper
pinch of salt-if not using the Cilantro Salt
-Mix everything and serve with tortilla chips.
Boy this is good stuff folks!

ReplyDeleteI love the combination of tomatoes and peaches. You know how I love fruit salsas. I made something similar last year and it was a real success. Some people seemed shocked at the combination of peaches and tomatoes, but they should try it and see that it's fabulous. As they say, "what grows together goes together."

ReplyDeleteMy sons love fruit salsas made nice and spicy. Mango is a good one to use too. I could eat it with a spoon though chips would be good too lol.
