I whipped up this
Marinated Cheese from the latest edition of Food Network Magazine as soon as I saw it. With the exception of fresh thyme (unfortunately my plant gave up the ghost this year), everything was on-hand. I subbed a little dry thyme, but highly recommend using a few sprigs of fresh if you can get it. Simply mix a couple ingredients, stir in some cubed cheddar, let sit for 30 minutes, stir and serve. It's a nice easy addition to charcuterie boards, appy trays, and football munchies.

Other options:
Marinated Cheddar Cheese-from Food Network
8 oz sharp cheddar into 1/2" cubes
1/3 C olive oil
2 Tblsp honey
Few thyme sprigs
1/4 tsp kosher salt
Big pinch red pepper flakes
~Toss together, transfer to covered jar, marinate 30 minutes at room temperature before serving.
