The idea behind these Peck of Pickled Peppers Deviled Eggs is to load them up with lots of crunchy fresh peppers. You can use bell peppers or jalapeno as I did here (my no-heat jalapeno plant was ~very~ happy this year)... Pickled peppers? Sure, simply allow jarred peppers to dry on a paper towel a bit then small dice and add some of them too. But I think you'll really enjoy the nice bite from fresh peppers. And it's hard to beat the pretty red and green for Christmas:@)
No real recipe, just make your favorite deviled eggs and stir peppers into the yolk mixture.
For added color I sprinkled some over top of the eggs too.
While we're big fans of a little paprika topping,
I didn't think about that adding that one more layer of peppers until after I took some pics.
Might be nice...
How to make hard boiled eggs in the Instant Pot Pressure Cooker:
- 1 C water in vessel.
- Put rack in vessel and place eggs on rack.
- Set to manual for 6 minutes.
- At the beep turn off but leave eggs in pressure cooker for another 6 minutes.
- Release any remaining pressure and immediately put eggs into ice water to cool down. It's the ice water that's important so they peel easily.
