I'm still on a bit of a retro kick and decided to make an Onion Soup Mix Meatloaf for Sunday dinner. What makes this different than the other two meatloaves on my blog? One has a ketchup topping, one a BBQ sauce topping, and this one is intended to be served with brown gravy. Something else I thought I'd try, using vegetable crackers instead of breadcrumbs or oatmeal. They added an extra bit of flavor, ~and bonus~ were in the cabinet and needed to be put to good use:@) My recipe is a combination/modification of many I read. The boys were pleased with the consistency of this meatloaf, and we all agreed it's very flavorful!
The original Lipton recipe calls for 2 lbs ground beef per envelope of soup.
I used 1 1/4 lb, this makes a robustly flavored meatloaf.
I will say, this is not a recipe for folks on a salt restricted diet though.
Two other meatloaf choices:
Onion Soup Mix Meatloaf
1 1/4 lb ground beef-I used 85% lean
1 envelope dry onion soup mix
1 egg
1/4 C + 2 Tblsp crushed vegetable cracker crumbs
1/4 C milk or water-I used Half and Half
2 Tblsp ketchup
Gravy of choice-I'm fond of Aldi's envelopes of brown gravy mix
- Mix everything except gravy.
- Form into log and place in loaf pan.
- Bake at 350 degrees for one hour.
- Let sit 10 minutes, slice and serve with gravy on the side.

I love dry onion soup mix, it adds great flavor to so many recipes, and sounds perfect for seasoning meatloaf. Great idea for using the vegetable crackers too!
ReplyDeleteI make this type of meatloaf except I use 1/2 cup of Italian bread crumbs and I use water instead of milk. The hubs loves this meatloaf. Thanks for the recipe Lynn.
ReplyDeleteI love meatloaf, and my recipe had onion soup mix in it, too. My mom used to always make gravy when she made meatloaf. Such comfort food! Thanks on the Aldi tip.
