These Applesauce Sweet Potatoes get cooked in a slow cooker freeing up even more oven space during big holiday meals. They come together easily using basic pantry ingredients and would be a nice sweet addition to the menu. You could always sprinkle some toasted pecans or marshmallows on top for fancier presentation. I had one huge sweet potato and made a half batch in a 2 quart Crock Pot. I was pleased with this side dish and I think sweet potato lovers everywhere will be happy too:@)
Cooking for one or two? Scale the recipe back a tad more and make this in a Little Dipper Crock Pot.
Slow Cooker Applesauce Sweet Potatoes -from Taste of Home
3 lbs sweet potatoes, peeled, washed and sliced-I used approx 1/2" slices cubed into 1" chunks
1 1/2 C unsweetened apple sauce
2/3 C brown sugar
3 Tblsp butter, melted
1 tsp cinnamon-can sub pumpkin spice if desired
1/2 C glazed pecans for garnish, optional
- Place sweet potatoes into 4 quart vessel (a liner comes in handy if you have one).
- Mix everything else ~except nuts~, pour over sweet potatoes.
- Cover, cook on low 4-5 hours or until potatoes are tender. I placed a towel under the lid to catch condensation, did not lift lid until 4 hrs, mine took a tad over 4 hours. A test batch to check timing is always a good idea.
- Stir and serve. Sprinkle with nuts or marshmallows before serving if desired.
