Raspberry Coleslaw

I've decided I'm going to try a bunch of new slaw recipes this summer and share them with you:@) First up... Raspberry Cole Slaw. The addition of raspberry vinaigrette adds a mild berry flavor, and while the recipe says to add some whole berries as garnish, I suggest gently pulling them apart and mixing them into the salad for a bigger burst of flavor with each bite. This is a nice little twist on coleslaw and if you like raspberry, I think you'll like it!

The recipe calls for half red cabbage, I didn't have it and used all green.
It also doesn't call for salt, I did add a pinch.
Oh and, those pretty raspberries? I picked them from my son's yard this morning...

Raspberry Coleslaw-adapted from Taste of Home
2 C shredded green cabbage
2 C shredded red cabbage-can use all green
1 C shredded carrots
1/4 C raspberry vinaigrette-I used raspberry salad dressing
1 1/2 Tblsp mayonnaise
1/4 tsp ground black pepper
1/2 C fresh raspberries
  1. Mix everything except raspberries.
  2. Gently fold in berries and add some to top for garnish if desired.
Eat well and have a happy day:@)

  1. I usually make my coleslaw with raspberry vinegar but have never thought to add fresh raspberries. Going to try this.

  4. I just added raspberries to my shopping list. How great to have them growing in the garden! The coleslaw sounds delicious. I have this ridiculous sweet tooth and wondering if a bit of sugar might be to my liking. Or maybe the raspberries add enough sweetness.
