Creamy Macaroni Cucumber Salad

It's been a while since I've found one of these little "Grandma's Recipe" gems, and I have to say we all enjoyed this Creamy Macaroni Cucumber Salad. Parmesan, Dijon mustard and pickle juice in macaroni salad? And of course dill is always a big hit with my crew. I can't wait until we can get garden cukes that don't need to be peeled, the green would add great color. If you'd like to try something different, add this one to your list folks:@)
I made 1/3 of a batch and subbed some whole wheat macaroni, used 1/2 tsp dried dill weed and 1/8 tsp garlic powder instead of fresh garlic.
Leftovers? I added tuna fish and called it lunch:@)

  1. Your macaroni salad looks like a good combo of flavors, Lynn. I like your idea of adding some tuna and calling it lunch (or dinner!).

  2. I love macaroni salad and just got a couple of boxes of Pasta so I can make some for spring time eating.

  3. I was thinking about making mac and cheese to go with hamburgers tonight but this looks even better! Hugs!

  4. Can't wait for fresh garden cukes! This would be a delicious way to use them, Lynn.
