Want even more color and crunch?
Possible add ins: red bell pepper, water chestnuts, slivered almonds
Broccoli and Pineapple Salad with Lemon Yogurt
Approx 1lb fresh broccoli cut into bite size florets
8oz can chunk pineapple, drained well, rough chopped and dried on paper towels
2 Tblsp thinly sliced red onion
6oz lemon yogurt
1/2 tsp lemon pepper seasoning-or to taste
- Boil water, add steamer basket of broccoli and cook for 5 minutes. Immediately place broccoli on plate in single layer in refrigerator to cool quickly.
- Gently mix everything well, chill and serve.

ReplyDeleteNow that's a new combo of flavor ingredients, Lynn! I love fresh broccoli that's been steamed first to retain that pretty color and make it less crunchy. The lemon yogurt makes for as easy binder. Thanks for sharing!
