Chunky Andes Mint Cookies -Small Batch

I had six lonely mints sitting in the candy dish and decided to make a mini batch of Chunky Andes Mint Cookies. These chocolates with a minty green center make a great St. Patrick's Day treat. You can try the small batch recipe below or use your favorite chocolate chip cookie recipe and just add more mints. I used a cookie scoop and the recipe below gave me five 3" cookies. I'm looking forward to my coffee break today:@)

I cut my mints in half long ways then into 8 pieces, I'd make them even chunkier by cutting them into six pieces next time.

Chunky Andes Mint Cookies -Small Batch-adapted from No. 2 Pencil
2 Tblsp butter, softened
2 Tblsp brown sugar-I used 1 1/2 Tblsp
1 Tblsp sugar
Pinch salt
1/4 tsp vanilla
1 egg yolk
1/4 tsp baking soda
1/4 C A/P flour
6 Andes Mints, unwrapped and cut into chunks
  1. In small bowl mix butter, sugars, salt and vanilla by hand.
  2. Add yolk, mix well.
  3. Add baking soda and flour until combined. Gently stir in mints.
  4. Drop by large spoonfuls on to parchment paper topped cookie sheet and bake at 350 degrees for 8-12 minutes or until done.
  5. Let cool (or not:@) and eat.

  2. What a great idea! I wonder if you could freeze these if you made a big batch? I have a friend that makes and freezes cookies all the time...
