Good Luck Baked Beans with Black Eyed Peas and Pork Sausage

I wanted to share a very tasty, yet non-traditional, idea for an easy New Year's Day meal. With one small change to this summer baked beans recipe, we can have Good Luck Baked Beans with Black Eyed Peas and Pork Sausage. Add a leafy side salad and maybe some ~golden~ cornbread and I'd say you're all set for a prosperous new year!
I'm suggesting substituting one of the cans of beans below for black eyed peas. But if you have a big enough crowd, just add the rinsed can of black eyed peas and increase the ketchup by 1 Tblsp and BBQ sauce by 2 tsp. This is a very sweet recipe, you can cut back on brown sugar if desired...

Good Luck Baked Beans with Black Eyed Peas and Pork Sausage
1 lb Jimmy Deen Sausage, browned
1 large onion, diced
2 stalks celery, sliced
1 can pork and beans, including liquid-approx 16 oz
*1 can lima beans, drained and rinsed-approx 16 oz-I used rinsed black beans
*1 can cut green beans, drained-approx 16 oz
*1 can cut yellow wax beans, drained-approx 16 oz
*sub 1 can rinsed black eyed peas for your choice of either lima beans/black beans or one of the string beans
4 Tblsp ketchup
2 Tblsp BBQ Sauce
2 Tblsp yellow prepared mustard
1 1/2 C brown sugar-I used 1 C and even cut that down the next time I made them
  1. Start browning sausage, when half way done drain some grease if necessary.
  2. Add onion and celery and finish cooking sausage.
  3. Mix everything together in 9x13 baking dish and bake uncovered at 350 degrees for one hour.
Eat well and have a happy day:@)

  3. Bill loves baked beans and I don't think he'd even notice if I added black eyed peas for the holiday! Like your substitution for the lima beans :)
