Spanish Olive Deviled Eggs -diabetic friendly option

These Spanish Olive Deviled Eggs are an easy way to change up a favorite side dish for your next BBQ or football party. You could easily make your favorite recipe and add some chopped olives to half of it to give folks a couple options. It seems like there have been great sales on eggs all summer making deviled eggs a very affordable treat:@)
Tip: Disposable icing bags make filling eggs a breeze. 

Spanish Olive Deviled Eggs-from Everyday Diabetic Recipes
6 hard boiled eggs, halved, yolks popped out
3 Tblsp light mayonnaise-I used regular
1 tsp Dijon mustard
1/8 tsp black pepper
3 Tblsp green onions with pimento, chopped-I drained mine a bit on a paper towel
Paprika and additional sliced olives for garnish if desired-I desired:@)
  1. Mix yolks, mayo, mustard and pepper until smooth.
  2. Gently mix in the olives.
  3. Fill whites, garnish with paprika and sliced olives (if using).
  4. Chill until ready to serve, best eaten the day they are made.
Eat well and have a happy day!
