While it doesn't call for salt, you might want to add a little.
3 1/2 C shredded cabbage
3/4 C shredded carrots-mine was a little light on the carrot
1/2 C finely diced celery-mine was cut into match sticks
1/4 C finely diced onion
1/2 C fat-free mayonnaise-I used regular
1/4 tsp lemon pepper seasoning-I added some lemon zest and extra pepper instead
2 tsp horseradish
2 packets Splenda-I added about 1 Tblsp sugar
1 Tblsp white vinegar-didn't pay attention and used cider vinegar
1 tsp celery seed
pinch of salt-optional
- Mix cabbage, carrot, celery and onion in bowl.
- Mix everything else together in another bowl, then combine with veggies. Mix well and store in fridge for at least one hour.
- I just tossed everything into one big bowl and mixed it up.
Lynn, this sounds like a tasty coleslaw! Bring on the summer!
ReplyDeleteI would love this. Have you tried Truvia? I like it better than Splenda. Hugs!
ReplyDeleteI would have never thought of adding horseradish, but I love the idea and will try it for sure.
ReplyDeleteSam
looks and sounds good!
ReplyDeleteThat sounds like a coleslaw with punch! I know I would love the horseradish bite to it! My kids have never caught on to coleslaw, but hubby loves it!
ReplyDeleteThis sounds like a great cole slaw recipe, with a little zip from the addition of horseradish!
ReplyDeleteWhat a smart idea to use real lemon and pepper, so much brighter than packaged lemon pepper seasoning! I love coleslaw, especially on or with BBQ, and this recipe sounds like it has a good balance of zing!
ReplyDeleteI love cole slaw in the warmer months! My favorite cole slaw recipe actually uses cider vinegar and not white :) I have to try the horseradish, it sounds like a great addition.
ReplyDeleteYummy, we love coleslaw in this house! Makes me want to run out to the kitchen to make some...think I will, Lynn.
ReplyDeleteHave a great weekend.
