They can be garnished with anything from pickled jalapenos to a pretty round slice of grape tomato (which would add beautiful color!). And while they're good either way I do highly recommend a generous sprinkling of smoked paprika.
I've added the dip label, this combination would make a great dip diced up fine, served on shredded lettuce and maybe topped with diced tomato and bacon... Serve with tortilla chips or crackers.
Guacamole Deviled Eggs
Six hard boiled eggs, cut in half, yolks popped out-perfect hard boiled egg method here
One avocado, seed removed and flesh scooped out
1 Tblsp fresh lime juice
1 Tblsp sour cream
1/4 tsp onion powder
1/8 tsp garlic powder
1/2 - 1 Tblsp fresh cilantro, finely minced-I used parsley
Jalapeno, small dice-optional, add as much as you'd like-I added about 2 Tblsp 1/8" dice
S&P to taste-I used Lawry's Chile and Garlic Seasoned Salt
Paprika, smoked paprika or chipotle powder for sprinkling on top-optional-I recommend smoked paprika
Other possible additions: bacon, tomatoes, green onion, mustard, hot sauce, chipotle, Worcestershire sauce...
- Mash the yolks, avocado, lime juice, sour cream, onion and garlic powder until smooth.
- Stir in the cilantro and jalapeno (and any other additions you may be using).
- Fill eggs and enjoy!

ReplyDeleteI know I'd love these and I almost always have an avocado on the counter or in the fridge. Definitely trying! I make a salad with hard boiled eggs, cooked bacon and avocado that my husband loves so I know he'll love me if I sprinkle some bacon over these :)
