Chicken Fajita Soup-New Food To Me

I bought a pack of small tri-colored peppers when I wanted to make my Heart Deviled Eggs and was looking for a fun way to use them... This Chicken Fajita Soup was perfect! And I can cross another item off of my New Food To Me List because I used a can of fire roasted tomatoes-they added a nice smoky/charred flavor that went very well with the fajita theme:@)
I didn't have fresh cilantro but did add some of the Cilantro Salt I made last summer. This recipe is easily split in half, although I did add a whole can of beans, just because they're good... An extra squeeze of lime juice at the table would add a nice little pop of flavor too!

Chicken Fajita Soup-from Two Peas & Their Pod
2 boneless chicken breast, cooked and diced or shred
1 Tblsp olive oil
medium size onion, diced
2 cloves garlic, minced
1/2 jalapeno, diced
1 small red bell pepper, cut in strips
1 small green bell pepper, cut in strips
1 small yellow bell pepper, cut in strips
2 (15oz) cans chicken broth
2 (15oz) cans diced tomatoes with juice-I used fire roasted
1 (15oz) can black beans, drained and rinsed
1 tsp ground cumin
1  1/2 tsp chili powder
1/2 tsp garlic powder
Juice of one lime
1/4 C chopped cilantro
S&P to taste
  1. Cook onion in olive oil for 5 minutes.
  2. Add garlic and peppers, cook for 5 minutes.
  3. Add everything else and simmer for 20 minutes, add S&P.
  4. Optional garnishes: sour cream, shredded cheese, tomatoes, avocado, cilantro, tortilla chips, lime juice
  5. Note: for a vegetarian option, use veggie stock and omit the chicken.

  5. That looks so good, Lynn. I'm big into sumptuous soups this time of year and yours fits the bill. I've never tried fire-roasted tomatoes. That's partly because I have frozen tomatoes from my garden available.

  8. I love your food list! It looks like fun adventures ahead....I know how I felt the first time I used fish sauce...I imagined all kinds of things...then found that it was black and only came in a huge bottle! Enjoy!!
