I don't have 2-8" cake pans so I used a bundt pan, it makes a short bundt cake.

Fresh Strawberry Cake-from Food.com
2 1/4 C cake flour, sifted-I used A/P
1/4 tsp salt
2 1/2 tsp baking powder
1/2 C butter, softened
1 1/2 C sugar-I used 1 1/4 C
2 eggs
1 tsp vanilla
3/4 C mashed strawberries-I put them through the food chopper
Glaze
1/2 C crushed strawberry-I used the food chopper
1/2 C crushed strawberry-I used the food chopper
1 C powdered sugar
2 Tblsp butter, melted
1/2 tsp vanilla
- Sift flour, salt and baking powder.
- In large mixing bowl combine butter, sugar, eggs and vanilla. Beat for 3 minutes, scraping sides.
- Add dry to wet, alternating with adding the strawberries and mix for 2 minutes.
- Pour into 2 greased and floured 8" cake pans.
- Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean. The bundt pan took longer.
- Turn out onto a wire rack and cool completely.
- For the glaze: Mix all ingredients but only add enough strawberries to make a pouring consistency. (I mixed the glaze in my 3 cup food chopper.)
- Drizzle over the cake.
Oh how I love strawberries. Sounds wonderful. Love how the icing has them too!
