Sweet Heat Cucumber Salad

I had a craving for cucumbers, does that sound odd in March? Must have been brought on by the beautiful weather we had last week! I decided to make a fresh sweet pickle but with a little heat.
Sweet Heat Cucumber Salad
One large cucumber, peeled, quartered and diced about 1/4" thick
1/2 small onion, sliced thin
1 small jalapeno, seeds and veins removed, sliced thin-more if you'd like:@)
1/4 C sweet red bell pepper slices
1/4 C sugar
1/4 C cider vinegar
1 tsp kosher salt
1/4 tsp ground ginger
A few grinds of fresh black pepper
-Mix everything and let marinate for at least 4 hours stirring occasionally, longer is better. I leave mine on the counter but the pesky Food Police would probably want you to keep it in the fridge...
Have a happy day:@)

I'm joining:

  1. I'm a big cucumber lover any time of the year, and I think this sounds like it has a wonderful kick. I wonder if it would even make my husband like cucumbers since he love jalapenos.

  2. Your salad looks so pretty and I love the red peppers in it. I could eat cucumbers everyday of the week and be a happy girl. I will definitely give your recipe a try.

  3. I made cucumbers in vinegar & sugar last week, too!! It had to be the temperatures, 'cus this morning is cold & rainy & all I want it something HOT!

Try adding a pinch of celery seed to them next time. I just LOVED the flavor that they bring. Got that recipe from Mary at One Perfect Bite

  4. I put a recipe from you on my post today - and I told them it was yours and give them your address. Hope that was okay. sandie

  5. ummm, looks and sounds delish...

  6. My grandmother made something similar except not hot. - The new food police are a pesky lot...but with that amount of vinegar even they should not be 'offended'. xo

  7. This looks delightful. I have plenty of cucumbers in the ground. I know that I will be wondering what do with them. I have bookmarked this recipe. This is a great idea.

  8. A crisp, cool cucumber sounds pretty good right about now. I'm sure this gets better the longer it marinates!

  9. I enjoy cucumbers, even in winter. I like the seedless English ones especially. This is a tasty recipe. xo

  10. Cucumbers quench my thirst like nothing else. So refreshing.
We love spicy so this is a great dish for us.

  11. LOL The pesky food police...I like that. Oh's going to be a nice hot week here in our part of Kansas so I think I may just have to try this. I'm definitely writing it out. I hope your week is a good one!
