Hola Amigos! Thursday is Cinco de Mayo and I thought I'd go through my older posts and list some recipes that might be fun for that celebration!

Arroz con Dulce (rice pudding with coconut milk)
This is the best rice pudding I've ever had! Recipe HERE

Bacon and Tomato Guacamole
A Rick Bayless recipe, and just TOO good! Recipe HERE

Chipotle Black Bean Dip
Not very colorful, but very good! Recipe HERE

Pina Colada Ice Cream
This is just beautiful! Recipe HERE

Pintos

  6. I forgot Cinco De Mayo was right around the corner. I'm not a cook so we usually go out to our favorite Mexican restaurant.
    Have a good weekend.

  9. Sometimes I cook Mexican food but not always. Guacamole is my favorite food group! My daughter is coming home Sunday for a week...maybe we will do something special this year!

  23. Hi Lynn!

My boss HATES Cinco de Mayo because it coincides with his birthday and he gets tired of the radio advertisements. Since he hates it so much....and because we LOVE to tease him....we always decorate his office and bring in Mexican treats. It's a wonder we still have jobs. :o) Ole!
