Three Ingredient Pumpkin Spice Cake

Hi everyone! Ok, how many of us have one of these in the closet?
Yep, I grabbed one at the Walmart too and I think it's time to get it out again!
I saw something last year that intrigued me... Three Ingredient Cakes.
I tried a couple different flavors and this is the one I would make again, they really liked it at the office.
Full disclosure here... I did add an extra tsp of Pumpkin Pie Spice, so technically it's a four ingredient cake!
Just add it all to a bowl and mix well.
I suggest making one or two cupcakes and using the rest of the batter in the brownie pan. I just bake a small ramekin and that's my snack!
325 degrees about 28 minutes, out of the oven...
The key to this pan is to spray everything really well with cooking oil.
Let it cool and gently push the cake out of the slots.
I top it with Buttercream Icing, cause you know, that makes everything better!

Maybe the finishing touch...
You can make this in a 9x13, or two 9" cake pans too!

  1. Yum that does look good and delicious! I'm with you when it comes to Pumpkin Pie Spice...never have enough. Whip cream would also be good on this. Where do you find that type of canned pumpkin? Last year it was so hard to find plain pumpkin but I suppose if you used Libby's Pumpkin Pie mix in the can you might not have to add the extra spice...hmmm...something to think about. Thanks for the easy recipe!

  3. I do have one of those pans- one of my boys gave it to me for Christmas last year. This cake looks really cute in it. It sounds so easy to make...my co-workers may get one of these yummy cakes soon! Thanks!

  5. Spice cake is a great classic and one of my very favortites! I just got the most brilliant tip from you. Baking cakes in ramakins! I'll have to try that. Sounds perfect.
    We are not huge sweet eaters... but I COULD probably eat a whole spice cake... anyway, I think making the cake in ramakins would be so adorable and just the right size for my hubby and me!

  12. WHOA...this looks delicious..you could have saved this to post on the PUMPKIN PARTY but, then again, you can make us ANOTHER batch!!
    I can't wait to try this but first.....a trip to WALMART. I do not have a pan like this and I just LOVE it. Can you love a brownie pan? Well, Shelia would say, "You bet your little beater-licking tongue, you can!!" haahhhaaa...I'm turning as silly as she is !! :))

  15. Those look super yummy! I actually have one of those pans- I won it in a silent auction with a bunch of other stuff including a box of spice cake mix. I am going to make these for my staff at school as a "thank you"-I'll post about it and link it back with you when I do. Thanks for sharing!

  17. That sounds and looks wonderful! I can almost smell it. I didn't buy one of those pans, in fact I didn't know Walmart had them. My husband asked why I couldn't just make brownies in muffin tins if I wanted them to have crusty sides. I tried it and loved them that way!
