Meatball Sub Stuffed Jalapenos

How about a hearty football munchie or lighter lunch that doesn't call for bread or a roll... These Meatball Sub Stuffed Jalapenos can even fit into a low carb meal plan if you use meatballs and sauce specifically made for that:@) Super simple and exactly as it sounds, fill cleaned pepper halves with cooked meatballs, add some pizza or pasta sauce, a light shake of Italian seasoning, and top with mozzarella. Very filling and there are lots of options for the meatballs themselves, both homemade and store bought. 

Meatball Sub Stuffed Jalapenos
  1. Heat/cook meatballs and sauce on stovetop or in microwave.
  2. Bake cleaned jalapeno halves at 375 degrees for about 5-8 minutes (firmer-5, softer-8).
  3. Stuff with meatballs, cut meatballs in half if necessary, add a shake of Italian seasoning, and sprinkle with mozzarella.
  4. Place under broiler for a couple minutes, until cheese begins to brown.
  5. Before serving drizzle top with more sauce and sprinkle with parmesan cheese, a little messy, but oh-so-good!
