How about a hearty football munchie or lighter lunch that doesn't call for bread or a roll... These Meatball Sub Stuffed Jalapenos can even fit into a low carb meal plan if you use meatballs and sauce specifically made for that:@) Super simple and exactly as it sounds, fill cleaned pepper halves with cooked meatballs, add some pizza or pasta sauce, a light shake of Italian seasoning, and top with mozzarella. Very filling and there are lots of options for the meatballs themselves, both homemade and store bought.
Meatball Sub Stuffed Jalapenos
- Heat/cook meatballs and sauce on stovetop or in microwave.
- Bake cleaned jalapeno halves at 375 degrees for about 5-8 minutes (firmer-5, softer-8).
- Stuff with meatballs, cut meatballs in half if necessary, add a shake of Italian seasoning, and sprinkle with mozzarella.
- Place under broiler for a couple minutes, until cheese begins to brown.
- Before serving drizzle top with more sauce and sprinkle with parmesan cheese, a little messy, but oh-so-good!
