The dough for these Lemon Poppy Seed Spritz Cookies is a dream to work with! It was the perfect consistency and the cookies stuck to the baking sheet without any trouble at all. ♥I like that in a spritz cookie:@) My first thought was, how could 1 tsp of poppy seeds be enough for all of that dough? But it really was, although, if you're a big poppy seed lover you may want to add a bit more. The predominant flavor is lemon, but you will notice the poppy seeds too. Don't hesitate to give these a try folks, any time of year using any disc shaped desired. They are flavorful cookies that would be perfect with a nice cup of tea.
Lemon Poppy Seed Spritz Cookies-from Wilton
1 C butter, softened
3 oz cream cheese, room temperature
1 C sugar
1 egg yolk
1 tsp vanilla
3/4 tsp lemon extract
1 1/2 tsp lemon zest
1 tsp poppy seeds
2 3/4 C A/P flour
1/4 tsp salt
- Cream butter, cream cheese and sugar with mixer until light and fluffy.
- Add yolk, vanilla, lemon extract and zest and poppy seeds, mix well.
- Mix in flour and salt.
- Load cookie press with dough and desired disc, press cookies onto cool, ungreased cookie sheets.
- Bake at 350 degrees for 12-15 minutes or until golden brown.
- Cool on cookie sheets for 2 minutes, then remove cookies to rack to cool completely.
I love making spritz cookies, and really do like to half each cookie recipe I make, just to keep the cookie volume down. These sound great, plus who doesn't love lemon poppyseed goodies?
