My Walmart still sells frozen cauliflower for around 88 cents a bag... A great value!
Yummy, smoky and with a beautiful char.
Not a hot sauce lover? I think this would make a very tasty meal as is... Just sayin':@)

As much, or as little, as you'd like:
boneless skinless chicken breast, 1" chunks
onion, 1" chunks
any color bell pepper, 1" chunks
celery, sliced 1/4" thick on the diagonal
frozen cauliflower, do not thaw
olive oil
S&P
Your favorite Buffalo sauce-I used Frank's
- Place grill pan on grill and pre-heat grill on high for 15 minutes.
- Place chicken and veggies in large bowl. Drizzle generously with olive oil and sprinkle with salt and pepper, mix well.
- Toss into grill pan, try to spread out into single layer and reduce heat to medium/high. Set timer for 5 minutes and close grill cover.
- After 5 minutes give everything a stir, set timer for 5 more minutes and close lid again.
- After 5 minutes give everything a stir, leave lid up and let cook another 2-5 minutes or until everything is cooked through.
- Add to large bowl, generously pour your favorite Buffalo sauce over everything and toss well to coat.
Let's fire up the grill and have a happy day:@)
Sounds delicious Lynn! I could happily nosh on shoe leather slathered in Buffalo sauce. :)
ReplyDeleteYes, this does sound so good and delicious. I can't wait to try this dish out for our summer grilling. Yay for grilling season!
ReplyDeleteOh my goodness, this is a perfect keto friendly summer meal. It is hot here and I am already using the grill often. This sounds like tonight's dinner!
ReplyDeleteLooks like a great meal for the grill, Lynn. I like the idea of using whatever is leftover.
ReplyDeleteWe love to grill! It's so hot we could just stand outside with a plate! hahaha! Enjoy your day sweet lady!
ReplyDeleteLOVE this! We haven't used our grill pan in ages, but finally have a gas grill so Bill will be less likely to incinerate the veggies, LOL! This combo is perfect and one I've never tried! Happy Sunday, Lynn!
