Honey Lime Red Cabbage Coleslaw-from Taste of Home
1 1/2 tsp grated lime zest
1/4 C lime juice
2 Tblsp honey
1 garlic clove, minced-I grated a small one
1/2 tsp salt
1/4 tsp pepper
1/4 tsp crushed red pepper flakes-I just added a few shakes
3 Tblsp canola oil-I used vegetable oil
small head of red cabbage (about 3/4 lb) shredded
1 C shredded carrots
2 green onions, thinly sliced-I added some diced onion instead
1/2 C fresh cilantro leaves-I added a little fresh parsley for color instead
- Mix everything except cilantro/parsley, let marinate in refrigerator for 2 hours.
- Mix well and sprinkle with cilantro/parsley right before serving.
