I added the grilling label, make individual portions wrapped in tin foil, grill over medium heat for about 25 minutes, turning occasionally...

Increase amounts as needed for more people...
1 large russet potato, cleaned and cubed to about 3/4"-I didn't peel mine
1 small butternut squash, peeled and cubed to about 3/4"-the neck of mine was about 3" long x 2.5" wide
half of a small onion, cut into about 3/4" wedges
1 Tblsp bacon fat
S&P to taste
light sprinkling of fresh rosemary, finely minced
- Melt bacon fat on roasting pan/cookie sheet in 400 degree oven and add veggies, carefully mix well. ~Or~ melt bacon fat in microwave and pour over veggies on roasting pan/cookie sheet and carefully mix well.
- Bake at 400 degrees for 15 minutes, stir.
- Bake for another 15 minutes or until veggies are tender. Remove from oven, sprinkle with S&P and rosemary.
Eat well and have a happy day:@)

This sounds really good, Lynn! I see the bags of diced butternut squash at Walmart & have even bought them once or twice. Not much flavor unless one puts a ton of brown sugar over them. I shall try them your way very, very soon. Thanks!
ReplyDeleteI'm sure like most people our age, my mom stored her bacon grease in a coffee can under the sink. Yikes. I need to start saving ours like you recommended--in fact, I'll start next weekend so I can make some yummy potatoes. Thanks for the inspiration! I may even add some squash, but not sure Bill will be thrilled ;)

ReplyDeleteOh yum, Lynn! This would be a great side dish for some pork chops, pork roast, or pork tenderloin for a wonderful Fall meal. I like the addition of bacon fat and the fresh rosemary.

ReplyDeleteI think this may be a yummy alternative to get me to like squash. Normally I am not a fan of it unless it is pureed in my pear & butternut soup.
