Another fun party option would be a dip, just small dice the whites, stir into yolk mixture and serve with crackers or veggies.
(This would be especially good with celery-how often do you hear me say that???).
I started with a Food Network recipe and played around a bit. They suggested serving them with a dollop of mango chutney on top, I didn't have that or I would have tried it-another new food to me... This recipe is easily scaled down to half or even a fourth.
Curry and Jalapeno Deviled Eggs-adapted from Food Network Magazine-April 2014
12 hard boiled eggs, peeled
1/2 C mayonnaise
1 tsp curry powder-or more?
1 tsp lime juice
1/8 tsp cayenne powder-optional-or more?
S&P
1 large Mac Daddy sized jalapeno, deseeded and small diced
2 tsp finely chopped cilantro-or more?
- Cut eggs in half and pop out the yolks.
- Mix yolks with mayo, curry, lime juice, cayenne and S&P to taste.
- Stir in the jalapeno and cilantro.
- Fill eggs and enjoy!
Deviled eggs are the best - love your flavorful version!

Who doesn't love deviled eggs and yours are incredibly full of flavor. I would skip the mango chutney too.

i'm guessing that'd be too much flavor for me. :)
ReplyDeleteI'll have to make these for my son, Mike. He loves spicy foods and loves jalapeños.
ReplyDeleteThis version looks delicious! =)
ReplyDeleteI just saw a pimento cheese recipe with jalapeno in it and now this. Apparently, I need to try it in both of them.
ReplyDeleteLoving this Jalapeño Deviled eggs, never made them, but had them! Thanks for sharing my friend. Hubby loves everything hot, like the Jalapeños.
ReplyDeleteHave a great Mother's Day my friend.

Hi Lynn, your deviled eggs look adorable, you always put such a nice twist on things. Very nice!
ReplyDeleteOh, I like the the idea of a dollop of chutney Lynn, it would take these eggs over the top! I went to buy a jalapeno the other day and all they had were Mac Daddy sizes :)
ReplyDeleteHi Lynn,
