Curry and Jalapeno Deviled Eggs

If you're looking for something that's really different to take to your next BBQ or party, these Curry and Jalapeno Deviled Eggs were great! The curry flavor was mild and the jalapenos were crunchy and fresh. You can make it hot, or not, by controlling the amount of cayenne you add. I think it would be fun to make a half batch of each, just be sure to designate which is which:@)
Another fun party option would be a dip, just small dice the whites, stir into yolk mixture and serve with crackers or veggies.
(This would be especially good with celery-how often do you hear me say that???). 
I started with a Food Network recipe and played around a bit. They suggested serving them with a dollop of mango chutney on top, I didn't have that or I would have tried it-another new food to me... This recipe is easily scaled down to half or even a fourth.

Curry and Jalapeno Deviled Eggs-adapted from Food Network Magazine-April 2014
12 hard boiled eggs, peeled
1/2 C mayonnaise
1 tsp curry powder-or more?
1 tsp lime juice
1/8 tsp cayenne powder-optional-or more?
S&P
1 large Mac Daddy sized jalapeno, deseeded and small diced
2 tsp finely chopped cilantro-or more?
  1. Cut eggs in half and pop out the yolks. 
  2. Mix yolks with mayo, curry, lime juice, cayenne and S&P to taste.
  3. Stir in the jalapeno and cilantro.
  4. Fill eggs and enjoy!
