Cheeseburger Chowder

Ok, this might not be the prettiest soup I've ever made but if I could encourage you to try one last hearty soup before the outdoor temperature really says spring, this would be it! I saw this recipe on I Need Mom! at 6:15 in the morning and had a half batch on the stove by 6:45. I don’t generally add cheese to soup so this was a nice Friday lunch treat and very different for me.
Sue made hers a healthier, low-fat version, mine was a little more… fattened up:@)
But only because I used what I had on hand.
I really think you'll like this if you give it a try folks!

Cheeseburger Chowder-adapted from I Need Mom!
8 oz ground beef
2 tsp canola oil-I used olive oil
1 C chopped carrot
1 C chopped celery
1 large potato, peeled and chopped-I didn’t peel mine
½ heaping C chopped onion-my addition
2 (15 oz) cans chicken broth
black pepper to taste
½ tsp paprika
Pinch of cayenne, optional-I didn’t use this
¼ C reduced fat evaporated milk-I used 2%
1 Tblsp flour-Sue used whole wheat, I used A/P
¾ C low fat cheddar cheese, shredded-I used regular cheddar
I finished mine with a little mushroom salt-very nice!
  1. Brown up the ground beef, remove from pot and pour out any grease.
  2. Add oil and veggies to pot, and cook until just tender, stirring occasionally.
  3. Add spices and broth scraping up little bits on bottom of pot. Bring to a boil, reduce to simmer and cook veggies through.
  4. Mix milk and flour, add to pot and heat until soup thickens up.
  5. Add cheese and stir until melted.
  6. Ladle out a big ole bowl and enjoy:@)
Eat well and have a happy day!

  1. Hi Lynn,
I love cheese in my soup. Usually I love Italian Parmesan for that. Your Cheeseburger Chowder sounds good. May I have a bowl?
    Best greetings, Johanna

  2. I thought we were about finished with soup season here, but then it did a little boomerang on us. This looks good!

  3. We love soup and this sounds delicious! I've decided to just continue with soup all summer--will lower the ac to accommodate!

  4. It looks delicious to me, Lynn. I think soup is difficult to photograph. I could eat a bowl of it for breakfast. I like hearty soups like this one.

  5. Lynn this looks really good. I'm copying this recipe out and will make it soon. Still having rain showers and cooler days so this will be yummy!

  6. This looks really great, Lynn. Very yummy.

  7. I have all of the ingredients on hand, except the mushroom salt (?), and the nasty weather show no sighs of letting up anytime soon. It will be a welcome addition to the weekend menu..I think I might add some green beans too (thinking out loud). Thanks.

Have a great weekend, friend. xo

  8. I have yet to try ground beef in soup - but only because it never occurs to me. This looks really good! I am going to try to keep this in mind.

  9. I don't know about you, but I think that many times the ugliest looking soups taste the best. This one looks worthy of making!

  10. Your soup sounds very tasty, Lynn. I like cheese on anything and soup is no exception. Thanks for sharing your recipe. Hope you have a great weekend.

  11. It's so cold in middle TN today, I need this soup. Looks delicious!

  12. Church potluck, here I come!

    Blessings, Debbie

  13. Yup, my family would love this, too...I approve of all your tweaks :)

  14. I love hearty soups and full-fat cheese for me! I've never heard of the mushroom salt. Hmmm...That's a new one to me. Thanks for the recommendation on this chowder, Lynn. Happy weekend!

  15. This sounds delicious and hearty Lynn! Our weather is like a roller coaster this spring so there are plenty of days where a warm bowl of filling soup is perfect!

  16. Sounds very comforting when there's a chill in the air. We've finally warmed up down in Florida. Last week was chilly and definitely soup weather.

  17. Mmmmmm Soup is always good for lunch and when it's called Cheesburger...well that's the ticket.
