Cheeseburger Chowder-adapted from I Need Mom!
8 oz ground beef
2 tsp canola oil-I used olive oil
1 C chopped carrot
1 C chopped celery
1 large potato, peeled and chopped-I didn’t peel mine
½ heaping C chopped onion-my addition
2 (15 oz) cans chicken broth
black pepper to taste
black pepper to taste
½ tsp paprika
Pinch of cayenne, optional-I didn’t use this
¼ C reduced fat evaporated milk-I used 2%
1 Tblsp flour-Sue used whole wheat, I used A/P
¾ C low fat cheddar cheese, shredded-I used regular cheddar
I finished mine with a little mushroom salt-very nice!
- Brown up the ground beef, remove from pot and pour out any grease.
- Add oil and veggies to pot, and cook until just tender, stirring occasionally.
- Add spices and broth scraping up little bits on bottom of pot. Bring to a boil, reduce to simmer and cook veggies through.
- Mix milk and flour, add to pot and heat until soup thickens up.
- Add cheese and stir until melted.
- Ladle out a big ole bowl and enjoy:@)

It looks delicious to me, Lynn. I think soup is difficult to photograph. I could eat a bowl of it for breakfast. I like hearty soups like this one.

I have all of the ingredients on hand, except the mushroom salt (?), and the nasty weather show no sighs of letting up anytime soon. It will be a welcome addition to the weekend menu..I think I might add some green beans too (thinking out loud). Thanks.

I have yet to try ground beef in soup - but only because it never occurs to me. This looks really good! I am going to try to keep this in mind.
