Lemony Italian Grilled Chicken

What do you do when you want a big lemon flavor in a hurry? Add it to a chicken marinade for the grill! And this one can't get much easier, I added the zest and juice from half a lemon to Italian Salad Dressing.
This was very flavorful and something I've already made a couple times this summer. 
Great as is or sliced thin to top a salad. I've even added some leftovers to a veggie soup
and the extra little lemon bite was great in the soup!

Lemony Italian Grilled Chicken Breast
2 large boneless/skinless chicken breasts, butterflied and flattened to approx 1/2" thick
1/4 C of your favorite Italian Salad Dressing, I used Good Seasonings
Zest of 1/2 lemon
Juice of 1/2 lemon
  1. Mix salad dressing, zest and juice well.
  2. Pour marinade over chicken and turn to coat both sides of meat.
  3. Cover and refrigerate for 30 minutes. Remove from fridge, turn meat and let sit for 30 minutes at room temperature.
  4. Cook covered over high direct heat for approximately 6 minutes on each side, or until done.
  5. Remove from grill, cover and let stand for 10 minutes.

  3. Aren't they delicious. I do this all summer too. My sons eat these like candy. I leave a zip-lock bag with the cooked chicken breasts and boneless thighs in the fridge and throw them on my salads. I love grilled chicken.

  5. Italian salad dressing is always good on chicken. Did you know you can now buy Olive Garden's salad dressing at Sams? It's low in sugar and carbs, too. I am so happy I might just eat a salad!
