April Celebrity Cook-Along!

Hi everyone, the Celebrity Cook-Along for April will be The Pioneer Woman! Ree Drummond, blogger done good:@) I was so happy to win a signed copy of her cookbook from A Musing Potpourri! La and fellow Ohio bloggers waited in line for hours to get books signed and said Ree was very warm and welcoming-Thanks La! I've been following PW Cooks for years, saw her on QVC and watched the Thanksgiving Throwdown.
I decided to make her Twice Baked Potatoes
Oh yea, we're talking bacon, cheese and sour cream-what's not to love!

I've also decided that cowboys are kinda cute, but maybe that's for another post:@)

Twice-Baked Potatoes
8 baking potatoes scrubbed clean
Canola oil (not called for on her blog, I don't think it's necessary)
8 slices of thick cut bacon, fried
2 sticks butter,cut into slices
1 C sour cream
1/2 C milk
1/4 to 1/2 tsp seasoned salt such as Lawry's
1/2 tsp black pepper
2 C grated sharp cheddar cheese
2 green onion, sliced
  1. Preheat oven to 400 degrees.
  2. With paper towel rub potatoes with canola oil (or not). Place on baking sheet and bake for 45 minutes, or until cooked inside and skins are crisp. (I'll poke a couple holes in mine.)
  3. Turn oven down to 300 degrees (says 350 on blog, I think that's more accurate).
  4. Crumble bacon into bits.
  5. Add butter, sour cream, bacon, milk salt and pepper into a big bowl.
  6. While potatoes are still warm cut in half lengthwise and scoop out the insides into the bowl with the rest.
  7. Use a potato masher to mix it all together. (I'll use my KA to make mashed potatoes, they stir in the bacon.)
  8. Stir in the 1 cup of cheese and add the onions.
  9. Adjust seasonings if necessary.
  10. Fill the potato halves with mixture and place on baking sheet.
  11. Top with remaining cheese.
  12. Bake for 10-15 minutes until cheese melts and potatoes are hot.
I'm posting this for Seasonal Sunday because I think they'd be great for Easter dinner!

    Love to read "The Pioneer Woman's Blog", and see photo's.{They were in Savannah, and I did not know it, till after the fact. I would have gone to get my book signed ~sigh~!

  7. Hi, I feel so terrible that I didn't get to take part in your first cook-along meme with Ina Garten! We've been traveling for the last week and things just got away from me. I just heard about The Pioneer Woman about a month ago when I went searching on Google for a recipe but will be away again during your second meme! I can't believe it - hopefully I'll be able to take part in your May meme!   11. I agree...what's not to like? Does Ree even have a bad recipe? Don't think so. I am eventually going to play along, but between the lack of a kitchen and a little spring trip I won't get to join in this month.

  22. I'm so jealous! No, just kidding. I'm very happy for you. I love Ree & have heard nothing but wonderful comments about how sweet & genuine she is. I have had the cookbook for a couple of years now & love it. I always have to tweak the recipes a bit, because we aren't working cattle & don't need all those calories! I also have her new book "Black Heels to Tractor Wheels" but haven't read it yet. I have to say, Ree is the reason I started blogging. Not that I thought I could ever create the following she has, but for the reasons she started hers in the first place -- just an outlet for sharing creativity. I know you are going to really enjoy your new book.

  24. I love Ree's cookbook too. I just pulled her jalapeño poppers out of the oven about 20 minutes ago to take to a function this evening. I think Ree...like Ina cook with simple ingredients. Although their cookbooks feature different styles of food the one constant is the simplicity.
