I love pickles and just happened to have all of the ingredients on-hand to try this Dill Pickle Relish Coleslaw:@) This is a great addition to my cole slaw series here on the blog and it would be perfect with an ~any type of shredded meat~ sandwich loaded with bar-b-que sauce. This was truly a different side salad and I'm looking forward to making it again, maybe with slow cooker BBQ chicken, or when it's nice enough to grill out. I might add a little carrot next time, just for a punch of color, but otherwise, it's really good just as it is. Recipe is easily cut in half or scaled down.
The original recipe made it low carb,
but since it called for items I'm not familiar with I'll let you click the link for that option.
Dill Pickle Coleslaw-adapted from Bobbi's Kozy Kitchen
14 oz bag shredded cabbage-approximately 8 cups
1/4 C mayonnaise-I added a little extra
1/2 small onion, grated
1/2 C dill pickle relish
2 Tblsp sugar
2 Tblsp white vinegar
1 tsp celery salt
S&P to taste
~Mix everything and serve-yep, it's that easy!
Eat well and have a happy day:@)
