Quick Pickled Zoodles or Zucchini Ribbons (Pickled Summer Squash Salad)

The operative word here is ~quick~ and this is about as basic as a pickle can get folks... I had one lonely yellow squash in the fridge and decided to try these Quick Pickled Zoodles or Zucchini Ribbons. I opted for the thick spiral blade to try to hurry things along even more, and yes, they were ready in 15 minutes! You can let them go a bit longer but aim for up to 30-45 minutes maximum to maintain crunchiness. These pickles are white vinegar puckery, cool and refreshing, and make a very nice summer side dish. Especially if we have extra squash to use up:@) Tuck this idea away if you're a pickle lover, I think you'll enjoy it. I surprised myself and kept going back to the bowl for another bite... Low carb lifestyle? Simply use a sugar substitute.
  And you don't need to spiralize them, cutting thin coins would work too. 
But spiralizing is fun and all the cool kids are doing it:@)

One note: Zoodles can be very long...
You might want to give the pile a quick cut in half or quarters.
Depending on your crew, this could be a pickle condiment or a pickled salad side dish...
I have one son that would pile this onto his plate like mashed potatoes:@)
*I had a 7" squash, I made 1/4 recipe of brine, which would have easily been enough for 2 squash.

Quick Pickled Zoodles or Zucchini Ribbons-from Food Pleasure and Health
4-6 small zucchini or yellow summer squash spiralized or cut into very thin coins
2 C white vinegar
2 C water
1/2 C sugar
1 tsp salt
  1. Dissolve sugar and salt in vinegar and water.
  2. Add squash, cover and marinate 15-45 minutes, stirring or shaking often. 
  3. Truthfully, I used Lock-N-Lock, tossed everything into it, closed the lid and just kept shaking and flipping the bowl upside down.
