Slow Cooker Rice Pudding -Small Batch Little Dipper Crock Pot Recipe (and Full Size Recipe)

Cutting back a little on sweets after the holidays? How about an easy dessert that only makes two servings... This Little Dipper Slow Cooker Rice Pudding leaves no tempting leftovers and offers true portion control:@) This was a very flavorful little pudding, you will know the vanilla and cinnamon are in there! I had some golden raisins on-hand and used them, they are very mild and sweet. Overall review: Don't hesitate to try this folks, and an extra bonus, it's always fun to find another use for the Little Dipper Crock Pot.

My Little Dipper will eventually come to a boil. So I chose to remove the lid and stir every 45 minutes. 
This did a good job of controlling the temperature so that it didn't begin to bubble/boil until the last 15 minutes.

Rice Pudding, Little Dipper Crock Pot Small Batch-adapted from Slow Cooking Perfected
1/4 C long grain rice
1 1/3 C milk-I used Half and Half
2 Tblsp sugar
1/3 tsp cinnamon-just estimate
1/3 tsp vanilla extract-just estimate
2 tsp butter
handful of raisins, optional-I used golden raisins this time
  1. Rinse rice under running water for a couple minutes, drain.
  2. Add everything to slow cooker and stir.
  3. Cover and cook for approximately 2.5 hours. I set a timer and stirred it everyt 45 minutes. 
  4. Stir and serve.

    1. Hello, the Little Dipper just plugs in, it doesn't have settings. The link to the original recipe says high.
