Leftovers? Spoon this over pasta or rice and serve with some chicken-very nice!
The recipe, as written below is more than enough for two-three people and easily increased. You will need to add salt.
Broccomole-heavily adapted from Taste of Home
For each cup of cooked (lightly packed into the cup) broccoli:
2 Tblsp sour cream-they called for reduced fat, I used regular
1 Tblsp minced fresh onion
1 1/2 tsp mayonnaise-they called for fat free, I used regular
1 Tblsp lemon juice-lime juice would be good too
1/4 tsp chili powder
1/4 tsp cumin
1/8 tsp garlic powder
couple shots of hot sauce
S&P to taste-I used my Walmart Lemon Pepper Seasoning
~Add everything to food chopper and pulse until fairly smooth, scraping down sides a few times.
~Serve with tortilla chips, potato chips, bagel chips or vegetables.

I love your Eagles cheering piggies running across the top!! I will pass on the broccumole, I have been trying to love broccoli but still not a fan. Interesting recipe though, very inventive! Rooting for Eagles on Sunday!

I do love broccoli and made a broccoli cheese soup last week. I've never had a broccoli Dip, but it sure sounds good, Lynn.
ReplyDeleteWhat a fun dip! It's amazing how creamy it looks with just a little mayo and sour cream! Maybe I'll skip the broccoli salad and make broccomole instead :)
